Job Description

Named Best Caterer in Los Angeles in 2021 by LA Magazine, Annie Campbell Catering is seeking an enthusiastic, experienced and dedicated team member to be our Kitchen Sous Chef.

This individual will oversee daily kitchen operations in conjunction with the Chef de Cuisine. This role will have the opportunity to contribute to the current menus, in coordination with CDC.

Excellent communication skills, attention to detail and ability to problem solve are a must! Sous Chef must have a mind for operations and will manage prep team, prep lists, daily orders, labor and food costs. Prior management of commissary kitchen required. Candidates must be able to follow recipes, but we are also looking for someone with creativity, a strong palate, and kitchen management experience. We are looking for a warm, motivated and highly organized individual to join our team.

Our kitchen is in Culver City.

Essential Functions

  • Responsible for production according to recipes/directions
  • Manages assigned staff, including scheduling, performance feedback, discipline
  • Is responsible for ongoing training and professional development of all staff members
  • Effectively builds trust with staff members and fellow management by providing clear and honest communication and feedback
  • Evaluates the quality, care and morale of the staff and strives to improve these areas through solid communication, care with schedule-writing, work group leadership, etc.
  • Ensure that all team members are always in clean, tidy uniforms and are always presentable
  • To be aware of all financial budgets and goals
  • Sets operational goals and follow-up plans for the work unit. Directs and holds all work unit staff accountable for those goals.
  • Oversees all phases of food procurement, production and service, including, inventory and ordering, storage and rotation, food preparation, recipe adherence, plate presentation, and service and production time standards.
  • Conducts daily line checks, food reviews and recipes of the day. Ensures that clear feedback is provided to the entire kitchen team, including staff and management.
  • Stay up to date on equipment maintenance, training, and ensuring all team members are understanding of kitchen equipment
  • Ensures the cleanliness of the kitchen by maintaining to specified standards, passing Health Department audits with a 90% or better, and training staff on proper sanitation guidelines
  • Attend, prepare, and participate in meetings with leadership teams and client on a as needed basis
  • Develops and tests recipes, techniques for food preparation and presentation
  • Handles all administrative duties assigned such as, menu editing, responding to emails, handling internal communication needs
  • Possess knowledge of food supplies, equipment and services, ordering and inventory control
  • Establishes, manages, and maintains all vendor relationships

  • Some computer literacy skills (Google Suite, Word, Dropbox)
  • Knowledge of standard kitchen safety, sanitation, and food handling, food safety, health & safety, allergens
  • Bilingual Spanish preferred

Education & Work Experience

  • Extensive catering experience a huge plus!
  • Solid track record of success in previous assignments/operation
  • Experience in a fast paced commissary kitchen 
  • Experience managing a team

Requirements

  • Must have and maintain an active Manager’s Food Handlers Card, as required by the California Health Department.
  • Professional appearance
  • Fully-vaccinated for COVID-19
