DEPARTMENT: Food & Beverage POSITION: Executive Steward REPORTS TO: Executive Chef ESSENTIAL JOB FUNCTIONS: Supervise all stewards to ensure all dishes and equipment is properly washed and stored Oversee hiring of stewards to fill all allotted positions Properly train all new stewards and continually train existing stewards Ensure stewards are always presentable and dressed to company standards Work with Chef to properly schedule according to business in banquets and outlets Assist Chef with monitoring labor costs for stewarding department Monitor breaks and break penalties for Stewarding Ensure plates and dishes are handled properly and stored properly Maintain employee timesheets for stewarding on a daily basis Assist in disciplinary actions as needed Maintain cleanliness and organization in dishwashing stations and banquet pantries Work with chef to schedule regular cleaning projects throughout the kitchen Ensure recycling and garbage is properly disposed of Control inventory of all dishes and glasses and inform purchasing agent if more is needed Coordinate with chefs and banquet managers for any items or actions needed from stewarding Must understand health department standards for dish washing areas Attend all departmental meetings as directed by Chef ESSENTIAL WORK SKILLS Must be able to organize and coordinate many employees at once Great communication and people skills Ability to lift and carry up to 30 pounds Able to work standing for extended periods of time Basic computer knowledge (email, excel, etc.) MINIMUM EDUCATION AND WORK EXPERIENCE: Must have a High School diploma Ability to speak Spanish is necessary Must have 2 years management experience Must have management health and safety certifications within 30 days of hire About Cavallo Point Cavallo Point is a San Francisco Bay area luxury lodge in one of America's most popular national parks.
