We are a premier, fine-dining New American restaurant located in Upstate NY. Known for its elegant, ultra-fine dining indoor room and its lively, high-end seasonal outdoor patio, the restaurant delivers pristine seafood and USDA prime aged beef alongside a world-class hospitality culture.

We are seeking a highly sophisticated, high-energy Director of Operations in Upstate NY to lead our front-of-house (FOH), guest services, financial monitoring, and vendor systems to ensure unparalleled execution every day.


Core Responsibilities


1. Strategic & Financial Leadership

  • P&L Management: Manage overall restaurant financial health, monitoring daily labor costs, food/beverage margins, and operating expenses to hit target profitability.
  • Vendor & Asset Relations: Oversee strategic procurement contracts, high-end food/beverage supply chains, and maintenance vendors.
  • Saratoga Season Scaling: Formulate operational and scaling strategy to smoothly manage extreme seasonal surges


2. Service & Guest Experience Excellence

  • Uphold Service Standards: Maintain and elevate the "selfless" service model that merges world-class fine dining with a welcoming neighborhood touch.
  • Floor Management: Maintain a strong presence on the floor during peak dining hours across both the indoor main dining room and the seasonal patio.
  • Guest Relations: Cultivate strong relationships with VIP regulars, seasonal high-rollers, and handle guest feedback with diplomacy and grace.


3. Team Leadership & FOH Management

  • Recruitment & Training: Hire, mentor, and build an elite service crew, ensuring proper training in technical serving etiquette, fine wine profiles, and upscale menu mechanics.
  • Labor Optimizing: Design and implement precise scheduling systems that maximize floor coverage while strictly managing labor metrics.
  • Culture Curator: Foster an inclusive, positive, and high-performance team culture built on mutual accountability across front-of-house and back-of-house teams.


4. Property & Regulatory Oversight

  • Ensure strict compliance with all local, state, and federal health and safety protocols, building codes, and New York State Liquor Authority (SLA) standards.
  • Supervise facilities, scheduling preventive upkeep for the historic indoor facility, kitchen infrastructure, and patio dining mechanics.



Required Qualifications

  • Experience: Minimum of 5–7+ years of progressive management experience in upscale, high-volume fine dining or luxury hospitality properties.
  • Financial Acumen: Deep understanding of restaurant financial operations, P&L management, labor cost optimization, and POS analytical tracking systems.
  • Proven Leadership: Strong record of building, coaching, and retaining high-tier restaurant service and hospitality teams.
  • Local Market Mindset: Strong understanding of luxury demographics is highly preferred.
  • Systems Familiarity: Experience using restaurant tech platforms (OpenTable, Resy, Toast POS, QuickBooks, Excel
