Pasta Cook

We are seeking an experienced Pasta Cook to join our talented culinary team. The ideal candidate has experience preparing fresh, handmade pasta and working in a high-volume, chef-driven kitchen.
Your primary responsibility will be producing and cooking pasta dishes according to our recipes and exact standards. You will also set up and maintain your station, prepare sauces and ingredients, monitor inventory, and follow all sanitation requirements. Strong communication, organization, and multitasking skills are essential.
Pasta Cook Responsibilities:

  • Set up and fully stock the pasta station before each service.
  • Prepare fresh, handmade pasta according to established recipes and standards.
  • Roll, cut, shape, portion, and properly store different types of pasta.
  • Prepare and maintain sauces, fillings, garnishes, and other mise en place.
  • Cook and finish pasta dishes consistently during high-volume service.
  • Coordinate timing with the rest of the kitchen to ensure complete orders are served together.
  • Follow prep lists, recipes, portioning guidelines, and presentation standards.
  • Communicate low-stock items and preparation needs to the Chef or Sous Chef.
  • Properly label, date, rotate, and store all ingredients.
  • Maintain a clean, organized, and sanitary workstation.
  • Follow all food safety and sanitation requirements.
  • Assist with inventory, receiving, and general kitchen preparation as needed.
Pasta Cook Requirements:

  • Previous pasta cook or line cook experience in a scratch kitchen.
  • Experience making fresh pasta by hand and using pasta-making equipment.
  • Knowledge of pasta doughs, fillings, sauces, cooking techniques, and proper storage.
  • Strong knife skills and familiarity with standard kitchen equipment.
  • Ability to follow recipes and consistently meet quality and presentation standards.
  • Ability to work efficiently and remain organized during busy service.
  • Strong communication and teamwork skills.
  • Ability to stand for extended periods and lift up to 50 pounds.
  • Experience making fresh cheeses, including mozzarella and ricotta, is a plus.
