Executive Chef (Chateau Mar) – Join Our Team and Make a Difference!

The Executive Chef – Banquets at the Chateau Mar Hotel, operated by Arc Broward. Responsible for leading and managing culinary operations related to banquet events, hotel dining outlets. This role ensures the highest standards of food quality, presentation, and service while maintaining cost controls and fostering a culture of culinary excellence. The Executive Chef will collaborate with event planners, General Manager to deliver memorable dining experiences for guests across all touchpoints

About the Role: Executive Chef  

  • Oversee all banquet and hotel kitchen operations, including menu development, food preparation, and execution.
  • Lead a team of sous chefs, line cooks, and kitchen staff with a focus on training, mentorship, and performance.
  • Ensure consistency and excellence in food quality, taste, and presentation across all events and outlets.
  • Develop standard recipes. 
  • Collaborate with the banquet and sales teams to execute menus for weddings, corporate events, and social functions.
  • Attend BEO (Banquet Event Order) meetings and tastings to ensure alignment with client expectations.
  • Manage high-volume production while maintaining culinary standards and timelines. 
  • Monitor food and labor costs, implement cost-saving measures, and maintain budgetary goals.
  • Ensure compliance with health, safety, and sanitation regulations.
  • Manage inventory, purchasing, and vendor relationships to ensure quality and cost efficiency.
  • Stay current with culinary trends and integrate innovative techniques and ingredients.
  • Responsible for overseeing all culinary operation related to banquet services including menu development, food preparation, staff supervision, and ensuring exceptional food quality and presentation for all banquet events.
  • Supports the hotel’s revenue and guest satisfaction goals by delivering high-standard culinary experiences for weddings, corporate functions, and other special events.
  • Collaborates with the Food & Beverage team to innovate and elevate banquet offerings while maintaining cost control and operational efficiency.

What are the requirements?

    • Degree or certification in Culinary Arts preferred.
    • Minimum 7 years of progressive culinary experience, with at least 3 years in an Executive Chef role in a hotel or banquet setting.
    • Proven experience managing large-scale events and high-volume kitchens.
    • Must successfully complete required screening: Level II background check, physical and drug screen.
    • Strong leadership, effective communication, and organizational skills are essential in a multicultural environment.
    • Proficiency in kitchen management systems, POS, and Microsoft Office Suite.
    • HACCP and ServSafe certification preferred.
    • Excellent organizational and communication abilities.
    • Flexible schedule including evenings, weekends, and holidays.
