What will you be doing?
  • Oversee culinary staff, provide guidance, administer discipline, and participate in performance evaluations.
  • Prepare, cook, and present food according to recipes and standards, ensuring taste, presentation, and efficiency.
  • Manage inventory, requisition supplies, and ensure proper storage and rotation to minimize waste and maintain freshness.
  • Ensure all equipment is clean and sanitized; enforce cleanliness, hygiene, dress, and OSHA standards consistently.
  • Educate staff on Marcus Hotels, Marriott policies, and safety procedures to uphold brand and health regulations.
  • Interact with guests and staff, analyze feedback, and suggest improvements to enhance service and product quality.
  • Represent the hotel with professionalism and maintain high standards of conduct and appearance.
  • Manage prep work, set-up, and breakdown of stations, ensuring smooth kitchen operations and timely service.
  • Perform additional duties as assigned.

What do you bring to the role?
  • High school diploma preferred; culinary school or 1-2 years of related experience, including supervisory and upscale restaurant experience.
  • Strong knowledge of kitchen equipment, food products, recipes, stocks, sauces, meat and fish preparation.
  • Ability to train and mentor staff, perform sous chef duties in their absence, and support team development.
  • Well-versed in sanitation standards and food safety protocols; able to obtain and maintain required certifications.
  • Capable of lifting up to 100 lbs, standing for extended periods, and working in confined, high-noise, and varying temperature environments.
  • Proficient in using kitchen tools and equipment such as slicers, mixers, grinders, and food processors.
  • Able to understand and train the staff on recipes, measurements, and requisitions; excellent English language, listening, and interpersonal skills.
  • Maintain a well-groomed, courteous appearance; able to work varied schedules including holidays and weekends under pressure.
