Job description

For fifteen years, Maison Premiere has been one of the most distinctive rooms in New York: a James Beard Award-winning cocktail bar, oyster bar and seafood restaurant built around a raw bar of more than thirty oyster varieties, the largest absinthe selection in the country, and a standard of hospitality that has kept us on the world's best lists year after year.

We are looking for a Sous Chef ready to help lead that kitchen into its next chapter.

Work with Chef Christian Czernicki

We recently welcomed Christian Czernicki as Executive Chef. Chef Christian came up through Union Square Hospitality Group as Chef de Cuisine at Union Square Cafe and Sous Chef at Marta, and went on to serve as Chef de Cuisine at Portale and Executive Chef at Diner. He is a technician with a real point of view, and this is a rare chance to build a menu alongside a chef at the start of his tenure.

The Food

French classics. New England seafood. Japanese technique. Creole flavor. Our cooking lives at the intersection of all four — bold, precise, and unmistakably ours. Oysters arrive through direct relationships with the farmers who grow them, and everything that follows is held to the same standard.

If you want to go deep on seafood — butchery, crudo, sauce work, the discipline of an ingredient that gives you no room to hide — this is the kitchen for it.

What You Bring

  • Extensive fine dining experience and command of French technique
  • The ability to run the pass with the Chef, and to run it well in his absence
