Midwood Smokehouse, part of the FS Food Group family, is a respected and fast-growing name in the Carolinasโ€™ restaurant scene. We specialize in authentic, wood-smoked barbecue โ€” no shortcuts, no gimmicks, just time-honored techniques and uncompromising quality. From North Carolina-style whole hog to Texas brisket and beyond, we are passionate about doing barbecue the right way.

The Sous Chef is responsible for assisting the Executive Chef in leading daily culinary operations in a high-volume, scratch kitchen. The ideal candidate will have strong leadership skills, attention to detail, and a passion for authentic barbecue and high-quality food preparation. You will help ensure consistent execution of our menu, maintain kitchen efficiency and cleanliness, and cultivate a positive team environment. We are currently seeking a talented and experienced Sous Chef to join our team. This is an opportunity to grow within a high-volume, full-service kitchen while being part of a supportive and driven culinary culture.

Key Responsibilities

Collaborate with the Executive Chef to manage all aspects of kitchen operations, including prep, execution, inventory, and cleanliness

Ensure all dishes are prepared to company specifications in taste, appearance, and portioning

Maintain the highest standards of food safety, cleanliness, and sanitation

Train, supervise, and mentor kitchen staff; foster a culture of teamwork and accountability

Assist in managing food and labor costs to achieve company goals

Support in scheduling and managing daily kitchen workflow, especially during peak service hours

Uphold the core culinary traditions and standards that define Midwood Smokehouse, while remaining open to innovation

Qualifications & Requirements:

2+ years of experience as a Sous Chef or Kitchen Manager in a high-volume, full-service restaurant

Culinary degree or equivalent hands-on experience in a scratch kitchen environment

Strong leadership, communication, and organizational skills

Deep appreciation for authentic barbecue and a desire to continue learning and evolving culinary techniques

Solid understanding of food cost, labor management, and kitchen operations

Ability to thrive under pressure and maintain a calm, focused presence

Comfortable working on your feet for extended periods (10โ€“12-hour shifts)

Able to work evenings, weekends, and holidays as needed

Must be able to bend, stoop, and lift up to 25 lbs.
