About Quello

Quello is a new coastal Italian restaurant opening in Greenwich, Connecticut, founded by acclaimed restaurateur Joe Campanale. The beverage program is a core part of the guest experience, with a 500+ bottle wine list spanning Italy, Burgundy, Champagne, and California, alongside a sophisticated cocktail program.

We are seeking a beverage leader with a strong wine foundation, operational rigor, and a passion for creating an exceptional bar and beverage experience.

Position Overview

The Beverage Manager will oversee daily beverage operations, including wine service, inventory management, ordering, cost controls, and beverage staff development.

This role combines guest facing wine and beverage leadership with back-of-house operational accountability and is ideal for someone equally comfortable on the floor, in the cellar, and behind the systems that drive profitability.

Key Responsibilities
  • Lead daily beverage service across dining room and bar
  • Support service during peak shifts as active floor leadership, inclusive of opening / closing of property
  • Maintain and support a 500+ selection wine program
  • Manage ordering, receiving, inventory, and beverage cost controls
  • Maintain accurate inventory through Beverly and related systems
  • Partner with the General Manager and ownership on beverage strategy and profitability
  • Train staff on wine, spirits, cocktails, and service standards
  • Support menu updates, pairings, and beverage driven guest experiences
  • Ensure beverage storage, cellar organization, and pars are maintained
  • Assist in vendor relationship management and purchasing
Qualifications
  • Minimum 4 years in beverage management or sommelier leadership
  • Strong wine knowledge required
  • Experience with beverage inventory systems and purchasing controls
  • Understanding of beverage cost management and P&L impact
  • Fine dining or upscale hospitality experience preferred
  • Strong service presence and team leadership skills
  • Court of Master Sommeliers or WSET certification is a plus but not required
