Role Overview


As Operations Manager, you will be responsible for the overall day-to-day operation of the restaurant.

Your core responsibilities will include leading business performance, building and developing a

high-performing team, and ensuring the venue consistently delivers exceptional guest experience,

strong operational standards and commercial results.

You will be expected to demonstrate effective control over labour, sales, costs and margins, while

driving the restaurant towards its financial and operational objectives. This role requires a hands on

leader who can inspire teams across departments and ensure the venue operates to the highest

standards at all times.


Main Responsibilities

Please note this is not an exhaustive list. Additional duties may be assigned as required.

โ€ข Lead the day-to-day operation of the restaurant, ensuring service, standards and performance

are consistently delivered to a high level.

โ€ข Take overall responsibility for the commercial and operational success of the venue.

โ€ข Deliver the venueโ€™s sales, labour, margin and profit targets in line with business objectives.

โ€ข Monitor business performance and take appropriate action to improve results where required.

โ€ข Build, lead and develop a high-performing team across all front of house departments.

โ€ข Oversee recruitment, onboarding, training and performance management of front of house team

members.

โ€ข Prepare managers to deliver organised, professional and profitable shifts.

โ€ข Work closely with Heads of Department to ensure a joined-up, efficient and consistent way of

working across the business.

โ€ข Collaborate with the Head Chef and kitchen leadership team to ensure strong communication

and smooth coordination between front and back of house.

โ€ข Ensure a first-class guest experience is delivered at all times and that guest feedback is handled

professionally and effectively.

โ€ข Drive service standards through coaching, training, observation and continuous improvement.

โ€ข Ensure pre-shift briefings are delivered consistently and to a high standard.

โ€ข Oversee atmosphere management, ensuring music, lighting, energy and service style are always

in line with the Chotto Matte brand.

โ€ข Maintain high standards of presentation, cleanliness and operational readiness across the

entire venue.

โ€ข Ensure rotas are planned effectively in line with labour budgets, business levels and operational

needs.

โ€ข Maintain strong control over labour costs, payroll, productivity and scheduling.

โ€ข Ensure all team members operate in line with company procedures, policies and expected

standards of conduct.

โ€ข Take responsibility for compliance across the venue, including licensing, health and safety, fire

safety, allergens, food safety, manual handling and due diligence requirements.

โ€ข Ensure all training and compliance records are completed accurately and maintained

appropriately.

โ€ข Maintain awareness of local competitors, market trends and hospitality developments, using

this knowledge to support business performance.

โ€ข Work with the Support Office and senior leadership team to implement sales-driving initiatives

and venue development plans.

โ€ข Support the resolution of operational issues quickly and effectively, maintaining a calm and

solutions-focused approach.

โ€ข Lead by example at all times, setting the tone for professionalism, accountability and guest

focus throughout the venue.

โ€ข Carry out any additional duties as directed by senior management.

Required Attributes and Experience

โ€ข Minimum 10 yearsโ€™ experience in hospitality or a similar guest-focused industry

โ€ข Proven experience in a senior management role within a high-volume, premium hospitality

environment

โ€ข Strong leadership skills, with the ability to inspire, develop and lead from the front

โ€ข A proactive and solutions-focused approach

โ€ข Able to adapt quickly and respond positively to change

โ€ข Engaging, approachable and confident in leading teams across multiple departments
