Pastry Chef

Overview

The Pastry Chef at Lilli is responsible for the creation, execution, and evolution of the restaurant’s pastry program. This role requires technical mastery, creativity, and a refined palate, with an understanding that every dessert is the final impression of the guest experience.

You will work closely with the Chef Owner to develop desserts that reflect Lilli’s philosophy: refined, seasonal, and intentional.

Responsibilities

Pastry Program Execution

  • Own all aspects of the pastry program — from mise en place to service execution
  • Prepare and plate desserts with precision, consistency, and elegance
  • Ensure all recipes, techniques, and presentation standards are executed flawlessly
  • Maintain readiness and organization of the pastry station at all times

Menu Development & Creativity

  • Collaborate with the Chef Owner on seasonal dessert development
  • Contribute ideas that reflect seasonality, technique, and balance
  • Continuously refine and elevate the dessert program
  • Participate in tastings and menu meetings

Quality & Technique

  • Demonstrate advanced pastry techniques and a strong understanding of flavor balance
  • Handle ingredients with care, respecting seasonality and sourcing
  • Maintain consistency across all services
  • Uphold the highest standards of cleanliness and precision

Teamwork & Culture

  • Embody the philosophy of “Yes, Chef” — humility, discipline, and teamwork above ego
