Job description

Komegashi, an upscale Japanese restaurant in Jersey City, NJ, is seeking an experienced Sushi Chef to join our team.

Responsibilities include:

  • Prepare high-quality sushi, sashimi, nigiri, rolls, and other Japanese dishes
  • Properly cut, portion, handle, and store fresh fish and seafood
  • Maintain excellent presentation, consistency, and quality standards
  • Set up and operate the sushi station efficiently during service
  • Assist with daily prep, inventory, ordering, and portion control
  • Maintain a clean, organized, and sanitary work environment
  • Follow all food safety and health department requirements
  • Work closely with the kitchen and management team to provide an excellent guest experience

Qualifications:

  • Previous professional Sushi Chef experience required
  • Strong knife skills and fish preparation experience
  • Knowledge of Japanese cuisine and sushi techniques
  • Ability to work efficiently in a fast-paced restaurant
  • Reliable, professional, and team-oriented
  • Experience in an upscale or fine-dining Japanese restaurant is strongly preferred
