About the role

The Director of Outlets & Banquets provides leadership and oversight for all food and beverage outlets. This individual will focus on finding additional means to drive strategic food and beverage programs while increasing the profitability and efficiency of the division.

What will you be doing?

  • Provide leadership to all of the Food & Beverage outlets - to include the restaurant (Audrey), Executive Lounge, In Room Dining and Banquets

  • Revise, generate, and direct standard operational controls

  • Develop pricing, service, and product strategies

  • Identify and stay current on market trends within the industry

  • Determine budgets and set guidelines for Food & Beverage division utilizing the appropriate systems to control all costs and maximize profitability
  • Utilize customer satisfaction surveys to develop and implement action plans to address areas of need

  • Work closely with accounting department to ensure operational costs are within budget 

  • Ensure accurate and timely accounting and reporting requirements are met
  • Supervise inventory management

  • Own vendor and customer relations

  • Conduct regular departmental walkthroughs to ensure all areas of resort operations meet company standards
  • Ensure safety and sanitation requirements are being adhered to

  • Establish performance standards and assist in the recruitment & retention of staff

  • Establish development opportunities for high potential associates seeking growth    

  • Other duties as assigned

What do you bring to the role?

  • 8+ years in a Food & Beverage management role, with at least 3 years of executive leadership experience.

  •  Experience in free-standing restaurant experience ideally in fine dining service.

  • Strong financial acumen and understanding of P&L statements, property financials, forecasts, capital expenditure requests, etc.
  • Honest, trustworthy, discreet, and careful with confidential information
  • Strong communication, written, and verbal skills

  • Entrepreneurial savvy with an ability to drive creativity and invention in others
  • Natural leadership qualities with the ability to motivate a team and provide mentoring & development opportunities to high potential talent

  • Ability to read, write and speak English at a native level.
