Position Summary
The Director of Catering Operations at Allegiant Stadium is a key member of the hospitality leadership team, responsible for overseeing all catering execution for private events, premium spaces, and game-day hospitality across the stadium. This individual will lead the planning and execution of high-profile events ranging from corporate galas and concerts to NFL game days and VIP experiences.
This role pays an annual salary of $100,000 to $125,000 and is bonus eligible.
Benefits for full-time roles: Health, Dental and Vision insurance, 401(k) savings plan, 401(k) matching, and paid time off (vacation days, sick days, and 11 holidays).

About the Venue
Allegiant Stadium is the technologically advanced stadium that is the home of the Las Vegas Raiders NFL team and hosts world-class entertainment, including concerts and special sporting events.
Responsibilities
  • Lead the end-to-end execution of all catered functions across the stadium, including club spaces, suites, event-level activations, and large-scale banquets.
  • Collaborate with Sales, Culinary, and Premium teams to develop customized service strategies for each event.
  • Oversee logistical planning for catering setups, timelines, and staffing to ensure flawless execution.
  • Maintain an active on-site leadership presence for major events and high-visibility clientele.
  • Ensure seamless coordination between culinary production, service teams, and event logistics.
  • Implement standard operating procedures to support scalable, efficient catering operations across all event types.
  • Monitor food safety, sanitation, and cleanliness standards in alignment with Allegiant Stadium and health department regulations.
  • Partner with Culinary and Beverage Directors on menu development and premium innovation.
  • Lead and mentor a team of catering managers, banquet captains, and service staff to deliver exceptional hospitality.
  • Manage sourcing, interviewing, onboarding, and training new team members.
  • Develop training materials to guide all event staff on skills, proper protocols, and standard operating procedure.
  • Drive training initiatives focused on VIP service, attention to detail, and proactive problem-solving.
  • Foster a culture of accountability, energy, and pride in delivering top-tier guest experiences.
  • Prepare and manage budgets, forecasts, and financial reports related to catering operations.
  • Manage labor scheduling, inventory control, and cost tracking to achieve department goals.
  • Review event billing, payroll, and reconciliation in collaboration with Finance.
  • Analyze post-event reporting and implement improvements for continuous service refinement.
  • Serve as the senior catering liaison to stadium partners, VIP clientele, and internal stakeholders (Raiders, UNLV, tour promoters, etc.).
  • Act as the primary escalation point for high-level service concerns during events.
  • Represent the hospitality team in planning meetings and walkthroughs with corporate clients and producers.

Qualifications
  • Bachelor's degree in Hospitality, Business Administration, or a related field is preferred.
  • 5-7 years of progressive leadership experience in large-scale catering or premium hospitality, ideally in stadiums, arenas, or convention centers.
  • Proven track record executing high-volume and high-end events (1,000+ guests).
  • Strong financial acumen and experience managing multimillion-dollar budgets.
  • Exceptional interpersonal and client-facing communication skills.
  • Advanced knowledge of catering systems (e.g., Delphi, TripleSeat), POS systems (e.g., Micros, Tapin2), and Microsoft Office Suite.
  • Ability to work a flexible schedule may include nights, weekends, and holidays as needed based on the events' schedules and business needs.
  • Required to possess or obtain a valid Southern Nevada Health District (SNHD) Food Handler Safety Card, Tam Alcohol Awareness Card or equivalent certification, and non-gaming work permit (Sheriff's Card)
  • Experience working with high-profile clientele and celebrity-level events.
  • Calm under pressure, with the ability to lead in a live-event environment.
