Job description
About Us: Scratch Bakery Cafe is a neighborhood bakery dedicated to handcrafting artisan breads, pastries, and wholesome caf offerings from scratch using high-quality ingredients. We are seeking a skilled and passionate Bread Baker to join our overnight production team in our Laguna Hills facility.
Job Responsibilities:
Mix, shape, proof, and bake a variety of scratch-made breads (sourdough, baguettes, various buns, focaccia, brioche, etc.) Maintain consistent product quality, appearance, and freshness
Operate ovens, mixers, proofers, and other bakery equipment safely and efficiently
Manage dough fermentation schedules and temperature controls
Ensure a clean and sanitary workspace in compliance with food safety standards
Follow recipes and portioning standards precisely
Communicate with pastry and caf teams for coordinated production
Assist with prep work and mise en place for following shifts when needed
Be punctual and dependable for overnight production flow
Requirements: Minimum 3 years of professional bread baking experience (artisan preferred)
Strong understanding of fermentation, hydration, shaping, and scoring techniques
Ability to lift 50 lbs and stand for long periods in a fast-paced environment
Shift: 8:00 PM 4:30 AM (Overnight Shift)
