We're looking for passionate, detail-oriented folks to join our baking team at the Boiceville location---3962 NY-28 Boiceville, NY 12412. As part of our team, you'll get hands-on experience making our full range of pastries-from mixing and shaping to baking and finishing. You'll be working with beautiful regional grains and learning traditional techniques that make our products stand out.  Our pastry bakers help bring our entire pastry program to life. This includes:

  • Viennoiserie: mixing, laminating, and shaping croissants, danishes, and more
  • Cold Case items: mixing, baking, and finishing pastries
  • Packaged Goods: mixing and baking for our retail-ready items

Requirements

Duties and Responsibilities:

  • Prepare and assemble baked goods, breads, pastries, and confections with precision and artistry
  • Assist in food production processes, including mixing, baking, and finishing touches.
  • Package finished products carefully for retail or catering purposes
  • Maintain the cleanliness and organization of the kitchen workspace in compliance with food safety standards
  • Support food handling procedures to ensure the freshness and quality of all items produced
  • Collaborate with team members to meet production deadlines and uphold product consistency

Job Requirements:

  • Experience in bread baking or pastry arts preferred
  • Strong knowledge of food preparation, food handling, and kitchen safety protocols
  • Ability to work efficiently in a fast-paced kitchen setting while maintaining attention to detail
  • Previous restaurant or catering experience is a plus, but not required; culinary school graduates are strongly encouraged to apply
  • Prior experience in artisan bread baking, pastry making, professional cooking, or a related discipline is preferred
  • Physical endurance to manage extended working periods, standing for long periods of time, and handling physical demands
  • Able to tolerate exposure to high levels of heat and cold
  • Able to pull, push, move, and lift to waist level and carry awkward and shifting weights up to 50 pounds
  • Able to work with, handle, operate, and control hot equipment and products in a safe manner according to Bread Alone guidelines
  • Able and willing to use Personal Protective Equipment (PPE) and assigned uniform as required per company policy
  • Willing to take responsibility for your own and others' safety as well as follow safety rules and regulations, and report any unsafe conditions to management
  • Willing to follow all food safety regulations and guidelines, which include but are not limited to: Removing any visible or exposed piercings and body jewelry, personal accessories, false nails & refraining from cologne or makeup at work (e.g. mascara, nail polish, heavy foundation, etc)
  • The Bakery is open 365 days a year, and team members must be willing to work consistently throughout the year, which includes holidays and weekends.  

Pastry Baker (AM - 6am - 7am start time)
Our pastry bakers help bring our entire pastry program to life. This includes:

  • Viennoiserie: mixing, laminating, and shaping croissants, danishes, and more
  • Cold Case items: mixing, baking, and finishing pastries
  • Packaged Goods: mixing and baking for our retail-ready items

Bread Baker (AM - 6am - 7am start time)
Bread bakers are involved in every step of our sourdough and yeasted breads program. This includes:

  • Mixing, shaping, proofing, and baking sourdough loaves, rolls, and other breads we produce daily

PM Baker (PM - 2pm start time)
Our PM bakers are responsible for the evening mixing and bake-off of both bread and pastry. Tasks include:

  • Bread: proofing, loading, scoring, baking, and packing sourdoughs, baguettes, and rolls
  • Pastry: proofing and baking our full line of viennoiserie and other pastries
