The Pastry 1 will ensure the highest quality preparation and presentation of fine pastries in all Lodge outlets, Banquets, and special parties.

Essential Duties & Responsibilities:

  • Follow recipe cards exactly to prepare pastries and baked goods.
  • Discuss daily events and production schedule with the pastry chef.
  • Rotate food in coolers, dry storage and personal mise en place, to ensure freshness and reduce waste.
  • Clean cooking surface and equipment.
  • Assist in placing food in dish in pastry shop.
  • Set-up mise en place for the next day.
  • Help train new Pastry 2 employees in their responsibility and organization of the pastry shop.
  • Assign tasks to the Pastry 2 employees with the approval of pastry chef.
  • Contribute a list of needed items to the daily food order with the approval of the Pastry Chef.
  • Comply with all Pebble Beach Company safety, health and sanitation policies and procedures.

Absolutely Required Skills:

  • Basic hot/cold food cooking knowledge, proficient knife skills.
  • Needs to be able to work and know standards of quality and production in the pantry, Stillwater, Gallery, Tap Room and banquets.
  • Five years kitchen experience including two years in equivalent position at a premier restaurant, resort or hotel.
  • High school diploma or equivalent required.

Desired Skills:

  • Graduate of accredited culinary program or apprenticeship desirable.
