Job description

Key Relationships:

Internal:         Management team, team members and everyone involved in the operation.

External:        New team members, members, vendors, support businesses, hospitality associations, and

everyone involved in the operation.

Duties:

•      Create weekly schedule for staff according to business needs, avoiding overstaffing and overtime.

•      Ensure employees take required meal and rest breaks in accordance with company policy and state

labor regulations while maintaining efficient daily operations.

•      Prepares necessary data for applicable parts of the budget, projects annual food, labor, and other costs

and monitors actual financial results, takes corrective action as necessary to ensure that financial goals

are not met.

•      Schedule and coordinate the work of cooks, and other kitchen employees to ensure that food

preparation is economical and technically correct and within budgeted labor cost goals.

•      Ensure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen

areas at all times.

•      Communicate effectively with staff from both the front and back of the house.

•      Provide training and professional development opportunities for all kitchen staff.

•      Counsel, discipline and evaluate kitchen employees.

•      Participate in hiring, promotion and termination process.

•      Prepare and submit daily requisitions.

•      Oversee the activities of kitchen staff with an awareness of portion control, quality and costs.

•      Control waste and minimize product spoilage through consistent attention to detail and adherence to

inventory procedures.

•      Evaluates products to ensure that quality, price and related goods are consistently met.

•      Establish and maintains a regular cleaning and maintenance schedule for all kitchen areas and

equipment.

•      Ensure that appropriate staff from the kitchen attend service lineups and meetings.

•      Approve daily specials before service.

•      Check completeness of mise en place of each station before service.

•      Comply with all Tehama Golf Club safety and health policies and procedures.

•      Cook all menu tastings for banquet events.

•      Assist with all special events.

•      Fill-in for executive chef as needed.

•      Duties as assigned by management.

Educational Requirements:

•      Graduate of accredited culinary program or apprenticeship under highly respected chef at a premier restaurant, resort or hotel property preferred.

License/Permits required:

•      Certification by the American Culinary Federation and certification as a chef preferred.

•      Valid California driver license.

•      Certified Food Handler and Sanitation card.

Required skills:

•        Excellent cooking, supervisory and sanitation skills.

•        Knowledge of all stations.

•        Broad knowledge of varied cuisine and ability to integrate regional ingredients to menus.

•        Ability to present cooking demonstrations.

Experience:

•        10 or more years of prestigious restaurant, resort or hotel experience with a minimum 4 years full

responsibility as sous chef.
