The Mavericks Performance & Training Center serves as the primary training, practice, performance, and hospitality facility for the Dallas Mavericks NBA organization. Designed to support elite athletic performance and world-class hospitality operations, the facility combines premium amenities, elevated food and beverage experiences, and a culture centered on professionalism, teamwork, discipline, and excellence.

The hospitality operation supports players, coaches, executives, corporate partners, VIP guests, and special events throughout the year. Operating in a dynamic, high-performance environment, the Mavericks Performance & Training Center seeks culinary professionals who are passionate about craftsmanship, precision, and creating exceptional hospitality experiences.

Position Summary

The Sushi Chef is responsible for executing sushi, sashimi, poke, raw bar preparations, and specialty Japanese offerings while maintaining the highest standards of quality, food safety, and presentation. This role requires exceptional knife skills, fish handling expertise, and a disciplined approach to execution.

The Sushi Chef will support hospitality operations, executive dining, player dining, VIP functions, and special events while ensuring consistency, creativity, and operational excellence throughout all service periods.

Core ResponsibilitiesSushi Production & Culinary Execution

  • Execute sushi, sashimi, nigiri, rolls, poke, and specialty Japanese preparations according to established recipes and standards.
  • Demonstrate advanced fish fabrication, handling, storage, and preparation techniques.
  • Maintain exceptional standards of product quality, presentation, freshness, and consistency.
  • Ensure proper rice preparation, seasoning, portioning, and execution standards.
  • Support development of seasonal sushi offerings and specialty menu items.

Operational Excellence

  • Maintain organized, clean, and fully stocked sushi stations.
  • Monitor inventory levels and assist with ordering and receiving specialty products.
  • Minimize waste through proper utilization and storage procedures.
  • Maintain strict adherence to food safety and sanitation standards.
  • Assist culinary leadership with special events and VIP hospitality functions.

Team Support & Development

  • Support training and development of junior culinary team members.
  • Lead by example through professionalism, discipline, and attention to detail.
  • Collaborate with culinary and hospitality teams to ensure seamless execution.

Qualifications & ExperienceRequired Qualifications

  • Minimum 3 years of sushi preparation experience.
  • Strong knowledge of fish fabrication, knife skills, and Japanese culinary techniques.
