Bambuza, located at the Portland International Airport, is looking for dedicated Cooks to join our vibrant kitchen team. As a cook, you will be responsible for preparing authentic Vietnamese dishes, ensuring the highest standards of quality, presentation, and taste. This is your chance to work in a fast-paced, dynamic environment where your culinary skills will take center stage as travelers from all over the world experience the taste of Vietnam right before they take flight!

  • Skillfully prepare a variety of Vietnamese dishes, including but not limited to pho, banh mi, spring rolls, vermicelli bowls, and other traditional Vietnamese entrees.
  • Wash, cut, marinate, and prepare ingredients such as fresh herbs, vegetables, meat, and seafood according to recipes and kitchen standards.
  • Utilize Vietnamese cooking techniques, including boiling, grilling, and steaming to prepare food in a timely and efficient manner.
  • Follow the restaurant's recipes and portion control guidelines to ensure consistency in taste and presentation.
  • Keep the kitchen area clean, organized, and compliant with food safety and sanitation regulations at all times.
  • Responsible for set-up, regular maintenance, cleaning, and break-down of kitchen machinery and equipment.
  • Complete routine operational checks and documentation as required.
  • Assist in checking and maintaining stock levels of ingredients, and notify the kitchen manager when supplies are running low.
  • Work closely with kitchen staff, cashiers, and management to coordinate food preparation and ensure that customer orders are fulfilled accurately and on time.
  • Be open to learning new dishes or adapting existing recipes based on customer preferences or seasonal ingredients.

Requirements:


  • Minimum of 2 years of experience as a cook, preferably in Vietnamese or Asian cuisine.
  • Strong understanding of traditional Vietnamese cooking methods, ingredients, and flavor profiles.
  • Ability to handle knives and kitchen equipment safely and efficiently, with a focus on detail and quality.
  • Ability to work well in a fast-paced kitchen environment, maintaining a positive and cooperative attitude with colleagues.
  • Strong organizational skills with the ability to prioritize tasks and manage multiple orders simultaneously.
  • Knowledge of food handling, safety, sanitation regulations, and valid food handlers card.


Skills and Qualifications

  • Previous experience in food preparation or as a line cook preferred, but not required (training will be provided).
