Job description

Join the culinary team at our beautiful hotel, the Canopy by Hilton Portland Pearl District, as our Lead Line Cook. The Lead Line Cookย oversees daily kitchen operations, supervises and trains line cooks, and ensures consistent, high-quality food production according to recipes and health standards. Acting as a working supervisor, they manage station stocking, assist with ordering, and maintain efficient service during busy shifts.ย 


Responsibilities:
  • Supervision:ย Manage, train, and mentor line cooks and BOH staff to ensure proper food handling and efficient service.
  • Quality Control:ย Ensure food quality, consistency, and presentation match established recipes and standards.
  • Operational Support:ย Organize station setup, manage inventory levels, and assist with ordering supplies.
  • Safety & Sanitation:ย Maintain strict compliance with hygiene and safety regulations (temperature checks, cleaning protocols).
  • Culinary Execution:ย Prep, cook, and plate menu items, often working multiple, complex stations during service.ย 

Qualifications:
  • Experience:ย Usually 2โ€“5 years of cooking experience, with experience in a supervisory or senior role.
  • Skills:ย Strong leadership, communication, and multitasking abilities.
  • Knowledge:ย Deep understanding of food safety, culinary techniques, and inventory management.
  • Physical:ย Ability to stand for long periods and lift at least 30 lbs.ย
