Prepare salads and other cold food in accordance with club recipes and standards.

  1. Prepares all salad items for lunch and dinner (washes and cuts lettuce, vegetables, fruits, meats, etc.) and maintains level during service hours.
  2. Prepares salads and other cold items for special functions.
  3. Cleans equipment and ensures that pantry area refrigerator and walk-in are clean and neat.
  4. Sets-up, maintains and breaks down salad prep station.
  5. Identifies products needed and requisitions them.
  6. Notifies supervisor in advance of product shortages.
  7. Maintains safety and security in work area.
  8. Maintains neat professional appearance and always observes personal hygiene.
  9. Adheres to state and local health and safety standards.
  10. Maintains the highest sanitary conditions to Board of Health standards.
  11. Ensures that workstation and equipment are clean and sanitary.
  12. Be able to lift 20 pounds or more.
  13. Covers, dates, and neatly stores re-usable leftover products.
  14. Ensures that food products are used before they spoil.
  15. Prepares and serves items in accordance with established portion and presentation standards.
  16. Prepares salad dressings.
  17. Makes recommendations for the maintenance, repair and upkeep of the salad areas and equipment.
  18. Performs other appropriate tasks as assigned by Food Service Manager and Chef.
