About SUZU Hospitality

Position Summary

The Omakase Server delivers the elevated, intimate experience of Suzune', SUZU's chef-driven omakase counter. This role guides guests through a multi-course tasting in close partnership with the sushi chefs โ€” narrating each course, recommending and serving beverage pairings, and choreographing impeccable, discreet service at the counter. The ideal candidate is refined, deeply knowledgeable, and an exceptional storyteller who thrives in the most premium tier of fine-dining hospitality.

Compensation

$5.50 per hour base wage plus tips. This is a tipped position and an Ohio tip credit applies; combined cash wages and tips are guaranteed to equal at least Ohioโ€™s full minimum wage of $11.00 per hour, and typically exceed it substantially with tips.

Key Responsibilities

Omakase Counter Experience

  • Deliver a seamless, refined, and personalized experience at the Suzune' omakase counter
  • Work in close coordination with the sushi chefs to time, narrate, and serve each course
  • Create an intimate, theatrical, and memorable journey for every guest

Menu, Beverage & Pairing Mastery

  • Develop expert knowledge of the omakase progression, ingredients, sourcing, and preparation
  • Guide guests through sake, wine, and beverage pairings with confidence and nuance
  • Accurately address allergens, dietary needs, and guest preferences in a tasting format

Guest Engagement & Storytelling

  • Narrate the story behind each course โ€” origin, technique, season, and tradition
  • Engage guests with warmth, knowledge, and genuine presence without intruding on the experience
  • Read the room and tailor pacing, conversation, and attention to each guest

Service Choreography & Pacing

  • Coordinate precise pacing between the chefs, beverage program, and counter service
  • Ensure flawless presentation, accuracy, and timing of every course and pour
  • Reset and maintain the counter to immaculate fine-dining standards throughout service

Standards & Discretion

  • Maintain an impeccable appearance and a composed, gracious demeanor
  • Practice discretion, professionalism, and responsible alcohol service at all times
  • Uphold all SUZU and Suzune' service standards and Ohio service regulations

Qualifications

  • 3+ years of fine-dining service experience; tasting-menu, omakase, or chef's-counter experience strongly preferred
  • Strong knowledge of sake, wine, and beverage pairings
  • Knowledge of Japanese cuisine, ingredients, and dining culture
  • Exceptional communication, presence, and storytelling ability
  • Refined, polished demeanor and outstanding attention to detail
  • Passion for delivering the highest tier of hospitality

What Suzu Offers

  • Competitive hourly pay + tips
  • Advanced training in omakase service, Japanese hospitality, sake and beverage education, and guest etiquette
  • Opportunities to grow into Omakase Captain or FOH Management roles
  • Professional, respectful, and supportive environment
  • Staff meals and continuous development
