General Description

The Kitchen Lead will be responsible for assisting with all duties pertaining to the kitchen room; supervising and assisting the Kitchen Manager.


Job Duties

  • Assist in supervising and assisting Kitchen Manager with kitchen personnel including training and setting expectations.
  • Complete daily check lists and turn into manager.
  • Responsible for assisting in the scheduling of all employees.
  • Ensure that proper rotation of cure coolers is being maintained.
  • Ensure ALL products are meeting Carlton Farms specifications.
  • Ensure the team is following all company and USDA rules and regulations.
  • Address any product complaints.
  • Address any out of spec products (mis-label, mis-pack).
  • Ensure the Kitchen always works as a whole team.
  • Ensure new employees are being trained properly and that staff is welcoming.
  • Ensure that maintenance is aware of any issues with equipment within the kitchen.
  • Ensure that all import products are worked in a timely manner.
  • Ensure import product matches Carlton Farms specifications prior to curing.
  • Maintain cleanliness in the break room, spice room, and production areas.
  • Walk the cooler, freezer and holding cooler areas prior to leaving to make sure all items are labeled and put away properly.
  • Work hours will vary and are not limited to a 40-hour work week.
