Reports to Head Distiller

Position Overview

The Assistant Distiller will support all distillation and production operations at the distillery. This role is responsible for assisting in day-to-day production activities including mashing, fermentation, distillation, aging, and bottling, while ensuring quality, consistency, and operational efficiency.

This position works closely with the Head Distiller & the Head of Operations and is ideal for someone looking to develop hands-on experience in craft distilling while contributing to the growth of premium spirits rooted in the heritage and landscape of Sheridan and the Bighorn Mountains.

The ideal candidate is detail-oriented, hardworking, and passionate about craft spirits, with a strong willingness to learn and grow within a fast-paced, entrepreneurial environment.

Key Responsibilities

- Assist in all distillation and production operations including mashing, fermentation, distillation, aging, and bottling

- Support recipe execution and batch production under the direction of the Head Distiller

- Monitor fermentation activity, temperatures, and production data to ensure quality standards are met

- Clean, sanitize, and maintain all production equipment and workspaces

- Assist with barrel filling, storage, and inventory tracking

- Support quality control processes to maintain consistency across all products

- Maintain accurate production records, logs, and batch documentation

- Assist with raw material handling and inventory management

- Support bottling, labeling, and packaging operations as needed

- Ensure compliance with all safety procedures and regulatory requirements

- Assist with general facility upkeep and organization

- Support special projects, new product development, and operational improvements

Qualifications

- Strong interest in distilling, brewing, fermentation, or food and beverage production

- Prior experience in a distillery, brewery, or manufacturing environment preferred but not required

- Ability to work in a physically demanding environment (lifting 50+ lbs, standing for long periods, working in varying temperatures)

- Strong attention to detail and commitment to quality

- Basic mechanical aptitude and willingness to learn equipment operation

- Strong organizational and communication skills

- Ability to follow detailed processes and instructions

- Willingness to work flexible hours, including occasional weekends

Preferred Qualifications

- Degree or coursework in Chemistry, Biology, Food Science, or related field (preferred but not required)

- Familiarity with fermentation and distillation processes (preferred but not required)

- Forklift certification (or willingness to obtain)
