Complete paperwork as required. Visually inspect products for unacceptable flaws or concerns and ensure products are to established quality levels. Ensure products are at acceptable quality levels prior to release to next step of operation. Follow all USDA, SQF, and ALL Holding Company HACCP requirements. Always maintain and observe all safety rules and regulations. Be able to maintain a flexible time schedule.Responsibilities:
  • Monitor the smokehouses to ensure that all products are cooked to proper company specifications.
  • Monitor all chilling of products that come through the department to ensure that they are chilled in compliance with company specifications.
  • Load and unload the smokehouses and brine chillers.
  • Accurately record and document all weight sheets and charts.
  • Assist in inspecting / checking the smokehouse rooms for Standard Sanitary Operating Procedures (SSOP) deficiencies hourly.
  • Transporting racks of product to and from the smokehouse floor.
  • Consuming products into SAP.
  • Loading and unloading carts of raw product into the smokehouses.
  • Lift, push and pull 50 + lbs
Who you are:
  • Be able to stand extreme temperatures change from hot to cold.
  • Following proper ready to eat procedures.
  • Staging product in packaging and ham steak coolers.
  • General housekeeping. Assist with production as required
  • Report detected inconsistencies to supervisors, quality assurance personnel , or managers.
  • Checking for condensation before moving product.
  • Must be able to read and write in English.
  • Basic math skills.
  • Be able to work independently.
  • Be able push and pull continuously heavy loads of product, may weight up to 1500lbs, assisted by a rail system.
  • Being able to understand and follow oral and written instruction from supervisors and designated staff.
  • General Knowledge of Smokehouse Operation A+.
