Bringing Home the Dough

The Fryer Operator prepares the dough by mixing ingredients according to the supervisor’s instructions and records the dough mix confirmations in the SAP computer program. In addition, the Fryer Operator operates the fryer and oversees the quality of product during the frying process. Position requires demonstration of competency for all on-the-job activities that may have a direct or indirect affect on product safety, legality, and\or quality.

Rising to the Challenge: Position Responsibilities

• Mixing Dough: Employee lifts seven (7) bags of ingredient from pallet leveler which is spring loaded to always keep ingredients to be lifted at 36 inches. Employee lifts the ingredients by sliding bag of ingredient onto 36 inch high Dandy Lift table. The employee then pushes Dandy Lift table to mixing bowl. Next, the employee raises the Dandy Lift table by electric control to level of mixing bowl which is 54 inches high. The employee opens bag of ingredient with a bag opener and slides upper end of bag off the table into opening of the mixing bowl letting gravity help remove most of the ingredient. The employee lifts up lower end of the ingredient bag and empties remaining ingredient in the mixing bowl. The employee operates valve and control panel to adjust mix and set mix temperature for various doughs. The employee records the dough mix confirmations in the SAP computer program. The employee prepares 15 – 20 doughs per eight (8) hour shift.

  • After dough is mixed by automatic mixer, the employee with the assistance of the second fryer operator/dough mixer pulls mixing bowl away from mixer and positions mixing bowl to automatic lift. The employee then operates control panel to enable mixing bowl to be lifted and tilted to release dough into fryer dough hopper. The employee climbs set of three (3) stairs and rakes remaining dough left in mixing bowl into fryer dough hopper.

• Operating Fryer: Employee operates control panel for fryer and oversees donut fryer to make sure proper temperature is maintained and the fryer is operating efficiently so that donuts are fried properly.
• Demonstrated ability to perform routine production tasks in accordance with applicable standards as directed by supervisor or person in charge.
• Ensures that all internal food safety and quality policies and procedures are followed.
• Maintains cleanliness of work area.
• Practices and complies with all Company policies and procedures including safety and work rules, etc.
• Performs other duties as directed by supervision.
• Ensures compliance with all company policies and procedures (EEO, Sexual Harassment, Safety, Sarbanes Oxley, etc.)
• Performance of other duties which are deemed by management to be an integral part of the job, including but not limited to fulfillment of work schedules, adherence to attendance policies, and other applicable operating rules, policies and procedures

• One or more years of production experience.

• No educational prerequisite; however must have demonstrated ability to read, comprehend and record information applicable to the job.
