Baker Job Summary
An Atticus Baker prepares handmade baked goods in our commissary bakery for our two retail stores, wholesale, and catering, using only regionally grown grains and flour. We use no white flour here. A baker must learn the details and application of different grains and how they impact our products.
Requirements for position
Bakers must know or learn the basics of pastry and bread production. They must be prepared to work early hours. We are a tight group of highly skilled bakers, so teamwork and collaboration skills are a must. Must also be comfortable working in a large-scale bakery environment.
Duties and Responsibilities
• Prepare, bake, and finish products
• Pull and prepare products for next day
• Prep ingredients for products, including tasks like processing fruit, weighing items, preparing butter blocks, etc.
• Mix and prep goods like bread, cookies, and scones
• Learn about regional grains and flour in bread and pastry
• Other tasks assigned by the pastry chef or senior bakers
Qualifications
• Basic knowledge of production bread and/or pastry baking; or an eagerness to learn the necessary theory and skills
• Some baking or food service experience; one year of production baking experience preferred
• Excellent communication and interpersonal skills
Physical Requirements
• Physical endurance to work long shifts in a busy environment.
• Ability to stand 90% of the time
• Ability to lift and carry 50 lbs.
• Ability to work in stressful, noisy, flour-filled environment.
Availability
• Must be able to work early shifts, weekends, and holidays
Reports directly to:
• Lead Bakers, Assistant Bakery Manager, Bakery Manager
