Delaware North’s Patina Group is hiring a full-time skilled and detail-oriented Butcher and Fabrication Specialist to join our culinary team at Lincoln Ristorante in New York, New York. $25.00 – $28.00 / hour

What will you do?
  • Fabrication and portioning of beef, pork, poultry, fish, shellfish, and other proteins as needed
  • Maintain precise portion control and product consistency according to restaurant standards
  • Assist with daily and weekly inventory counts
  • Proper labeling, dating, rotation, and storage of all products
  • Maintain a clean, organized, and sanitary butcher station at all times
  • Monitor product quality and communicate any inconsistencies or shortages
  • Work collaboratively with chefs and kitchen team to support daily service and prep needs
  • Follow all DOH food safety and sanitation standards
More about you
  • Minimum of five years’ experience as a meat cutter in a grocery store or processing facility, or have completed a two-year apprenticeship program
  • Must be able to operate all meat production equipment, including band saw, meat slicer, meat grinder, knives, Hobart label machine, and rotisserie in accordance with manufacturer’s instructions and company safety standards
  • Possesses excellent guest service skills
  • Must possess strong time management and organizational skills
  • Previous butcher or protein fabrication experience required, preferably in fine dining or high-volume kitchens
  • Strong knife skills and understanding of whole animal and fish fabrication
  • Excellent attention to detail and accuracy
  • Ability to maintain organization and consistency under pressure
  • Strong work ethic, professionalism, and reliability
  • Ability to lift and move heavy products safely
  • Flexible schedule, including nights, weekends, and holidays
Physical requirements
  • Ability to stand for the duration of the shift.
  • Ability to lift and carry up to 50 pounds
  • Ability to bend, twist, reach, and kneel.
  • Occasional lifting above head.
  • Required to work in cold temperatures due to refrigeration and deep freeze.
