Reporting Structure
A Butcher will report directly to the Executive Chef and Sous Chef team with a dotted line relationship to the Corporate Executive Chef and Chef/Owner, Danny Grant.
What You Will Do
  • Whole fish butchery
  • Fabrication of whole sides of dry-aged beef
  • Sharpen and adjust cutting equipment
  • Receive, inspect, and store meat upon delivery
  • Cut, bone, or grind pieces of meat
  • Store meats in refrigerators or freezers at the required temperature
  • Keep inventory of meat sales and order meat supplies
  • Clean equipment and work areas to maintain health and sanitation standards
  • Negotiating and confirming orders with suppliers
  • Adhering to food safety and sanitation control
Who We are Looking For
  • A minimum of 2 years of experience in kitchen preparation and cooking; at least 6 months experience in a similar capacity
  • Ability to use hand tools, stand or walk for extended periods, lift heavy items, and work in cold environments
  • Must be able to work in a fast-paced environment while standing (up to 8 hours) for long periods of time
  • Must be able to bend, stoop, squat and lift up to 50 lbs. on a regular and continuous basis
  • Must be able to work on holidays, nights and/or weekends
  • Must have reliable transportation
This role requires the ability to move and lift up to 25 lbs. Standing, sitting, or walking for extended periods of time and ensuring a professional appearance in a clean uniform are also required.
