Job description

Job Summary:

This position provides "Omotenashi" (Hospitality) to all guests by sharing the Japanese Culture, cooking guests' meals by tableside; engaging and entertaining guests by performing "Culinary Show" elements. Ensuring the entertainment and satisfaction of guests and also setting up and maintaining the Teppan carts and maintaining a clean work area.

Essential job Functions:

Provide Service with Sincerity through "Omotenashi" by following and performing the Mitsukoshi Hospitality Standards and attending to the guests' needs and sharing the culture of Japan.

Engage and entertain the guests by performing a "Culinary Show" entertaining the guests while cooking their orders by providing a display of cooking skills and showmanship; engaging the guests through conversation and the introduction of the Japanese Culture. Encouraging verbal participation and responding to guests' questions and comments.

Properly cooking all food items to liking and request of the guest and following all food cooking and flavoring guidelines and adjusting cooking process based on order mix and volume to ensure the serving of the best possible meals

Ensures smooth operations at tableside by ensuring the proper set up of cars and by properly explaining the food items being and served then balancing the cooking times of different meals to allow guests to eat at the same time. Accommodating guest allergies and other special requirements.

Maintains a clean work area by cleaning grills between sittings and cleaning personal cooking utensils and the Teppan carts as needed.

Mentor new hires on food preparation and hygiene and overseeing their work.

Follow all Food Safety, Sanitation and HACCP Guidelines set forth either by the company or state.

Assist with cutting vegetable, meats and fish as required by Chef.

Assist in culinary production, advanced culinary and line cook areas.

Train new Cultural Reps / employees on Teppan chef techniques and hospitality

Evaluate processes to improve operational quality, efficiency and guest satisfaction.

Follow company handbook and procedures.

Performs other duties as assigned
