Certified Angus Beef ® Brand Culinary & Butchery Internship (Externship)
ONLY OPEN TO CULINARY INSTITUTE OF AMERICA AND JOHNSON & WALES UNIVERSITY STUDENTS
Location: Certified Angus Beef ® Culinary Center, Wooster, Ohio
Length: 15-week paid internship
Work with and learn from industry-leading chefs and meat scientists at the Certified Angus Beef Culinary Center, where the old-school art of beef butchery meets modern culinary cuisine. You could be at the hub of this private dining and educational center, where you'll prepare food for high-end culinary events while gaining skills and understanding in beef butchery, beef cut preparation and plating, beef charcuterie and aging, social media and food styling, and beef's journey from the farm to table.
Primary Function: Culinary Focus on Beef Cooking Styles & Cuts
  • Work alongside our Certified Angus Beef culinary team to assist in preparing and executing premier, beef-centric meals in our scratch kitchen, ranging from high-end buffets to multi-course plated meals.
  • Learn proper beef cooking techniques, such as grilling, smoking, braising, roasting and sous vide, as well as proper beef seasoning and marinating techniques.
  • Learn to grill the perfect steak and be prepared to cook in front of and share tips with guests.
  • Learn all aspects of executing fine-dining cuisine from daily mise en place to making stocks, sauces and side dishes (salads, starches and vegetables).
  • Create and write recipes for specific beef cuts and creatively plate dishes for both large and small groups.
  • Explore cooking with global flavors with our culinary team.

Beef Butchery
  • Work alongside our meat scientists to understand the full side of beef, each cut and ideal cooking methods.
  • Fabricate beef in our Meat Lab, where sides of beef are broken down into portioned cuts for specific menu needs.
  • Become an expert at identifying all cuts of beef and the proper cooking method for each.

Food Photography, Recipe Testing and Social Media Creation
  • Learn food photography tips, techniques and skills.
  • Gain video, photo and content tips for social media
  • Create social media stories highlighting beef culinary innovation.

Learn about the Beef Community
  • Visit a family Angus farm to understand where the focus on flavorful beef begins. You'll do more than just tour-join the family for chores and experience how they care for their cattle and land each day.

About This Paid Internship
Certified Angus Beef stands for quality, and as our company continues to experience growth, we seek a candidate who shares our vision of integrity and excellence. This position is ideal for a student who is passionate about food and cooking and embraces opportunities to perfect this craft.
Content noted for the internship will be covered during the 15 weeks with topics, fluctuating from day to day. For example, 3 days of culinary programming may be followed by 2 days in the Meat Lab.
Although most hours should be daytime on weekdays, candidates should be willing to work 8-10 hours per day, including some nights and weekends. Limited travel is possible for specific events.
  • This is a paid internship, $560/week stipend.
  • Housing assistance can be provided by the company and interns are eligible to receive up to $500 reimbursement for monthly housing costs (or $125/week).
  • Interns are responsible to provide their own transportation (vehicle).
