Job description

Position Overview
The Austin area Bunkhouse Hotels are looking for a Pastry Chef to support the hotels' culinary programs, ensuring quality products that accurately represent and align with each location. The Multi-Property Pastry Chef support role is responsible for leading and supporting pastry, bread, amenity, and event production across multiple properties. This role ensures brand consistency, quality standards, and operational efficiency across all pastry outlets. The position requires a hands-on leader who thrives in both creative menu development and structured operational management, providing training, recipes, costing, and support for property pastry teams.
The Pastry Chef will work closely with property leadership, reporting to BTM and JL, and will spend dedicated time at each property to oversee production, provide training, and assist with seasonal menu refreshes and event execution and recipe adherence.
Key Responsibilities
Operational Leadership
  • Oversee daily pastry, bread, and amenity production across multiple properties, ensuring quality, consistency, and presentation standards are met.
  • Collaborate with property pastry teams to streamline workflows, production schedules, and equipment usage for maximum efficiency.
  • Provide on-site support during key events, regular service, banquets, and high-volume production periods.
  • Ensure compliance with sanitation, HACCP, and food safety standards at all properties.

Menu Development & Culinary Innovation
  • Partner with BTM and JL to develop seasonal plated and "pastry", bread based Items, event amenities, and banquet desserts.
  • Create, test, and document new recipes, ensuring they align with brand identity and operational capabilities at each property.
  • Support menu refreshes by training property teams on new techniques, plating, and production requirements.
  • Maintain awareness of pastry trends, ingredient sourcing, and modern techniques to keep offerings innovative and competitive.

Financial & Administrative Oversight
  • Provide accurate recipe costing, portion control, and waste reduction strategies to maintain profitability and food cost targets.
  • Support properties with purchasing guidance, par levels, and inventory management for pastry and bakery items.
  • Monthly P-mix review oversight reviewing sales to guide menu changes.

Training & Team Development
  • Train and mentor property pastry teams in production techniques, bread baking, and high-quality dessert execution.
  • Develop clear standard operating procedures (SOPs), prep lists, and training materials to ensure consistency across properties.
  • Support recruitment and onboarding of pastry talent when needed and provide feedback on team performance to property leadership.

Cross-Property Collaboration
  • Spend time across all properties to evaluate production standards, implement best practices, and provide hands-on support (must have reliable transportation to move across Austin properties)
  • Serve as a resource and liaison between corporate culinary leadership and property teams to ensure alignment on goals and initiatives.
  • Communicate regularly with property Executive Chefs, General Managers, and F&B leadership to ensure pastry operations are meeting guest and brand expectations

Qualifications:
- A true desire to satisfy the needs of others in a fast-paced environment.
- Refined verbal and written communication skills.
- Requires specialized training or education in pastry as this individual will train and develop pastry cooks
- This position may have to lift up to fifty (50) pounds on a daily basis; anything over fifty (50) pounds is considered a minimum two (2) person lift
- This position may require the person to stand and/or walk, push, kneel, bend, balance, squat, reach and stretch for eight (8) hours per day
