Job description

Flagship Bakery Manager

We are looking for a Flagship Bakery Manager to oversee our wholesale bakery and commissary operations at our new flagship location in Jack London Square, Oakland.


Job Summary:

The Flagship Bakery Manager will oversee our wholesale bakery and commissary operations and lead a team to produce and package our products at our flagship bakery in Jack London Square for both external clients (grocery, food service, and catering) and internal (JLS restaurant and future Reem’s locations). They are responsible for improving and increasing production of our current and future wholesale products, while maintaining the quality and standardization of our current products. Our product mix includes breads, pastries, sweets, and bulk savory items such as flatbread toppings, dips, sauces, and pickles.


Key Responsibilities:

  • Ensuring smooth, efficient, and financially sound operations of our wholesale program and commissary operations
  • Designing systems, tools, and procedures for streamlining production and producing consistent quality product efficiently
  • Maintaining a clean, safe, and high quality kitchen that is compliant with all local, state and federal regulations
  • Hiring and onboarding, and staff based on needs of production and financial feasibility
  • Ensuring staff adhere to Reem’s values and quality standards as laid out in Reem’s handbook
  • Coaching and developing bakers and prep cooks to be excellent team members who can execute a scaled up operation with a lean team.
  • Overseeing an efficient bulk production schedule to fulfill JLS cafe and catering needs.
  • Managing wholesale accounts to effectively execute wholesale orders on a daily basis.
  • Continuously improving and keeping quality of recipes, order lists, and inventory updated
  • Supporting in research and development of new products based on growth and market demand

Qualifications:

  • At least 3 years of experience in culinary operations management position and expertise in bakery wholesale production
  • A demonstrable high level of business and financial acumen, including successful P&L management
  • Excellent written and verbal communication skills, with an intuitive sense of diplomacy and emotional intelligence
  • Self-motivated/directed—enjoys working hard and identifying challenges; able to act and react, as necessary, even if limited information is available; not hesitant to lead through difficult situations; can take unpopular stands when necessary while thriving via collaboration.
  • Commitment and capacity to carry out Reem’s core values (below) in day-to-day operations
  • Ability to work weekends, evenings and some holidays
  • Comfort with conversational Spanish is strongly preferred
  • Ability to lift and carry 50 lbs or more and work on the floor for extended periods

Compensation/Benefits:

  • Salary commensurate with experience, ($80,000-85,000) with an increase coinciding with a significant rise in volume of production (t.b.d);
