Job description

Job Overview:
We are looking for a creative Pastry Chef to join our award-winning, high-volume waterfront operation. To be responsible for crafting delicious desserts and confectionery ensuring exceptional, quality, taste, and presentation. In this role you will develop dessert menus, create recipes, manage inventory and food cost for both Shooters Waterfront and Grateful Palate, our events and catering company. 
To be successful in this role you must be well-versed in the culinary arts and adhere to strict standards of hygiene and cleanliness. You must be able to effectively communicate and lead a pastry team. 
Essential Duties and Responsibilities: (other duties may be assigned)
  • Design, test, and execute dessert menus that align with the restaurant's concept and seasonal availability.
  • Prepare and bake a wide range of desserts including cakes, pastries, tarts, and specialty items.
  • Monitor and maintain consistent food quality and presentation standards.
  • Train and supervise pastry team members, as applicable.
  • Manage inventory and order ingredients and supplies while minimizing waste.
  • Ensure all kitchen equipment is maintained and cleaned according to safety and sanitation standards.
  • Stay updated with current pastry trends and incorporate new techniques and ideas into the kitchen.
  • Collaborate with the Culinary Director to integrate desserts into the full menu.
  • Maintain cost control and contribute to food cost and labor targets.
  • Ensure compliance with all food handling and sanitation regulations.

Required Qualifications/Skills: 
  • Degree or certification in culinary arts, pastry, or related field preferred.
  • Experience in hotel, banquet, or catering environments required. 
  • Ensure all pastries are consistent and up to our standards.
  • Expertise in a variety of baking techniques and the pastry-making process.
  • Creative ability with artistic skill in decorating cakes and other desserts.
  • Keen attention to detail and quality.
  • In-depth knowledge of sanitation principles, food preparation, and nutrition.
  • Flexible working hours, including weekends and evenings, when necessary.
  • Capable of working in a fast-paced, high-volume production environment.
  • Strong leadership and team management skills. Effective communication.
