What does a butcher manager do?

A Butcher Manager oversees the daily operations of a butcher shop or the meat department in a grocery store. Their responsibilities include managing staff, ensuring food safety and sanitation standards are met, ordering inventory, and maintaining quality control of all meat products. They may also interact with customers, handle special orders, and help with cutting and preparing meat. Effective Butcher Managers combine hands-on butchery skills with leadership and business management abilities. Their role is crucial for ensuring product quality, customer satisfaction, and efficient department operations.

What are the key skills and qualifications needed to thrive as a butcher manager, and why are they important?

To thrive as a Butcher Manager, you need expertise in meat cutting, product knowledge, inventory management, and often previous supervisory experience. Familiarity with point-of-sale (POS) systems, food safety certifications like HACCP, and various meat processing equipment is typically required. Strong leadership, customer service, and organizational skills help you manage staff, maintain quality, and ensure customer satisfaction. These skills and qualifications are vital for running efficient operations, ensuring food safety, and maximizing profitability in a retail or wholesale meat environment.

What are some common challenges faced by a butcher manager and how can they be addressed?

As a Butcher Manager, common challenges include maintaining consistent product quality, managing inventory to minimize waste, and ensuring strict adherence to food safety standards. Balancing staff schedules during busy periods and training new team members can also be demanding. These challenges can be addressed by implementing efficient workflow processes, providing regular training, and using inventory management systems to track stock levels. Strong communication with both staff and suppliers is essential for maintaining a smooth-running operation.

Job description

Job Title: Chef de Cuisine / Sous Chef — All Locations

Company: HOUSEpitality Family

Location: Richmond, VA

Job Type: Full-time

Salary: $54,000 – $65,000 per year

About This Posting

This is a standing posting, not a listing for a specific vacancy. HOUSEpitality Family is a growing restaurant group, and we build our culinary leadership bench ahead of need — that means we are always open to speaking with talented, hardworking culinary leaders, even when no specific opening is listed. We promote from within first, but we are always looking to speak with talented, passionate individuals. If you think you'd be a great fit for our team, we'd like to talk with you. Qualified candidates may be considered for current or future opportunities across our eight Richmond-area restaurants, spanning waterfront seafood, Mexican, coastal, and French brasserie concepts.

About Us

HOUSEpitality Family proudly owns and operates eight restaurants in and around Richmond, VA: The Boathouse (Sunday Park, Rocketts Landing, Short Pump, and City Point), Casa del Barco (Canal Walk and Short Pump), Island Shrimp Co., and Can Can Brasserie. We Celebrate Life One Bite At A Time, and we're building a team of passionate, driven people who want to grow in a culture rooted in Integrity, Innovation, Knowledge, and Empowerment.

What You'll Do

As a Chef de Cuisine or Sous Chef, you'll be a hands-on leader in a high-volume kitchen: running the line during service, expediting, training and coaching cooks, managing prep lists and pars, maintaining food safety and cleanliness standards, and supporting the Executive Chef on ordering, inventory, and scheduling. You'll be on the fast track — this is exactly the role our Executive Chefs grew from.

What We're Looking For

  • 2+ years in a kitchen leadership role (Sous Chef, Kitchen Manager, or strong Lead Line Cook ready to step up)
  • The ability to run a busy line calmly and keep quality high under pressure
  • A teacher's instinct — you develop cooks instead of just covering for them
  • Solid fundamentals: knife skills, sauces, butchery, scratch cooking
  • Availability for nights, weekends, and holidays

Compensation & Growth

Chef de Cuisine and Sous Chef salaries start at $54,000, increase to $56,000+ as you complete milestones in our structured career path, and range up to $65,000. Upon graduating your career path (typically within your first few months), you qualify for an annual bonus opportunity starting at $3,000 based on performance metrics, with bonus potential that grows from there. Executive Chef salaries in our group begin where this range ends — the path up is real and defined.

What We Offer

Health/dental/vision benefits, paid time off, dining privileges across all eight restaurants, and a defined growth path toward Executive Chef within a multi-concept group.

How to Apply

Apply with your resume. All inquiries are handled confidentially. Even if the timing isn't perfect today, we'd love to stay connected about future opportunities.
