Experience and Education
High school or equivalent education required and at least two (2) years experience in food preparation is preferred but not required.
Job Duties
Complies with established departmental policies and procedures, operational goals, performance improvement program, sanitation and infection control standards. Attends meetings, completes and maintains all job performance requirements and standards as established by department specific procedures. Maintains all standards as required in department, and Hospital Policy and Procedure manual. Maintains required records as directed. Participates in educational programs and inservice meetings and training sessions.
Maintains established policies and procedures, standard, and practices in food preparation to achieve departmental goals of high quality and nutritional meals. Follows production guides, menu and assembles food, supplies, etc. for daily preparation. Labels and dates food for sale or storage. Reports spoiled food or defective equipment. Uses variety of butcher utensils, etc. Reports supply shortages and low stock levels.
Weighs, measures, and mixes ingredients using appropriate procedures to prepare food items according to standardized recipes. Performs tasks such as cuts and trims meat, fish, poultry and vegetables. Spices and seasons as required by recipe. Cooks, bakes, etc. in appropriate utensil or cooking equipment. Carves, slices, or otherwise portions foods to assure effective portion controls and optimums. Serves on patient trayline. Assures quality consistency and attractive presentation.
Cleans and sanitizes work area and equipment at end of shift. Follows procedures for sanitation of work area and equipment during food production. Inspects that all equipment is in good working order and reports any defective supplies or equipment to super- visor. Cleans in areas of kitchen as directed by supervisor.
Performs other related duties assigned or requested.
