Job description

The Banquet Captain is a key hourly tipped position that oversees banquet service operations and ensures all service details are executed. Depending on the size of the banquet event, the Captain may serve an entire event by themselves or lead a team of multiple employees. Banquet Captain hours are part time by nature and dictated by scheduled events. The ideal Banquet Captain works in the Restaurant or Tavern outside of scheduled banquet events to fulfill combined full time hours.
The Banquet Captain reports directly to the Groups & Events Manager for events and the Restaurant Manager for Restaurant and Tavern shifts. The Captain is responsible for staying up to date on event information by attending event meetings and monitoring banquet event order changes. The Banquet Captain is responsible for training new event service staff. This position also works closely with all departments to help fulfill banquet needs including set up and emergency needs.
The role is very self-directed and is ideal for a talented individual who enjoys direct outreach, guest contact and varied responsibilities, and who possesses strong communication and organizational skills. The position is right for someone who's excited to promote a unique mountain resort like ours to a targeted set of users who value the warm, down-home, yet professional experience of the lodge, as well as its combination of timeless feel with modern comforts and its special mix of recreation, relaxation and indulgence.

RESPONSIBILITIES
  • Oversee banquet service operations and ensure that all banquet service details are executed
  • Assist Event Coordinator in ensuring that all aspects of events are on time
  • Make adjustments as needed and relay that information to the appropriate personnel
  • Review Banquet Event Orders (BEO's) at the beginning of each shift
  • Ensure event spaces are clean and set up as contracted
  • Strong and Effective Communication skills with the Production Chef to ensure the quality, display, and vision of food is to the highest standards
  • Directly supervise and train banquet service staff
  • Provide leadership to staff in the absence of the Event Coordinator
  • Maintain all equipment and facilities in an organized, clean and safe manner
  • Communicate any event needs, problems and concerns to Event Coordinator
  • Communicate needs with other departments such as maintenance or laundry requests
  • Maintain par levels of supplies and assist in ordering as needed
  • Perform quarterly inventories in collaboration with the Event Coordinator

Duties Before Event:
  • Ensure scheduled employees have reported to work on time
  • Report any absent or tardy employees to the Event Coordinator
  • Hold pre-event meetings to review all information pertinent to set- up and service of each event
  • Assign stations and side work to event staff
  • Ensure that the proper glassware and silverware are polished
  • Ensure table settings are executed according to event details
  • Prepare wine & wine chillers, etc.
  • Perform buffet set up items are all cleaned and polished

Duties During Event:
  • Provide and assist with service as needed
  • Bus tables, clean buffet and service areas as needed
  • Assist Bartender restock products and acquire needed items
  • Communicate with support crew and management regarding timing and needs
  • Supervise banquet functions to ensure they run smoothly and efficiently
  • Coordinate mandatory meal breaks and ten minute breaks with service staff
  • Make sure the Dishwasher understands needs throughout the event

Duties After Event:
  • Lead cleaning and breakdown event space (including buffet breakdown if necessary)
  • Ensure all event items are cleaned and put away properly
  • Ensure all trash is emptied and linens are taken to laundry
  • Ensure all closing duties for staff are completed before staff sign out

Duties Day After Event:
  • Double check and facilitate cleanliness & organization of Event Storage and Catering areas
  • Report staff performance, disciplinary issues and assist counseling of employees
  • Report any found safety hazards, equipment needs, maintenance issues and failed procedures to Event Coordinator
