Job description

The Mavericks Performance & Training Center serves as the primary training, practice, performance, and hospitality facility for the Dallas Mavericks NBA organization. Designed to support elite athletic performance and world-class hospitality operations, the facility combines premium amenities, elevated food and beverage experiences, and a culture centered on professionalism, teamwork, discipline, and excellence.

The hospitality operation supports players, coaches, executives, corporate partners, VIP guests, and special events throughout the year. Operating in a dynamic, high-performance environment, the Mavericks Performance & Training Center seeks culinary professionals who are passionate about creativity, execution, and hospitality excellence.

Position Summary

The Pastry Chef is responsible for overseeing all pastry, dessert, bakery, and specialty confectionary production throughout the Mavericks Performance & Training Center. This role combines creativity, technical execution, organization, and operational discipline to deliver exceptional desserts and baked goods for hospitality operations, executive dining, VIP functions, player dining, and special events.

The ideal candidate is highly organized, technically skilled, and capable of executing both large-scale production and refined plated dessert presentations.

Core Responsibilities: Pastry & Bakery Leadership

  • Execute and oversee production of desserts, pastries, breads, breakfast pastries, specialty baked goods, and seasonal offerings.
  • Develop and maintain recipes, production standards, and presentation guidelines.
  • Create innovative desserts while maintaining operational efficiency and consistency.
  • Support menu development initiatives and seasonal programming.

Production & Operational Management

  • Manage pastry production schedules and workflow.
  • Ensure consistent quality, portioning, presentation, and freshness standards.
  • Maintain inventory levels and ordering requirements for pastry ingredients.
  • Minimize waste through effective planning and product utilization.
  • Maintain organized pastry production areas and equipment.

Hospitality & Event Support

  • Support VIP events, corporate functions, player dining experiences, and hospitality activations.
  • Create specialty desserts and displays for executive and guest functions.
  • Collaborate with culinary leadership on integrated menu development.

Team Development

  • Train and mentor pastry team members.
  • Foster a culture of professionalism, accountability, and continuous improvement.
  • Lead by example through strong execution and operational discipline.

Qualifications & Experience Required Qualifications

  • Minimum 5 years of pastry or bakery experience.
  • Formal pastry training or equivalent professional experience.
  • Strong knowledge of baking techniques, chocolate work, plated desserts, and production systems.
  • Strong organizational and time management skills.
  • Ability to execute under tight deadlines while maintaining quality standards.

Preferred Qualifications

  • Luxury hospitality, hotel, or fine dining experience.
