WHAT WILL YOU NEED TO BE A PATIENT CARE TECHNICIAN?
  • Preferably a high school graduate or equivalent.
  • Must have at least four (4) years of combined experience and knowledge in institutional or restaurant cooking techniques, food service operations, safety, and sanitation.
  • Preferably, an external candidate will possess a safe food handling certification or must obtain one within six (6) months of start. Internal candidates must retain their current safe food handling certification.
  • Basic computer skills (for facility work, communications via email).

PHYSICAL REQUIREMENTS:
The position is located indoors, under normal conditions, and sometimes has fluctuating hot/humid working conditions. Should be able to push/pull 500+ lb. on wheels, lift/move 50 lb. from floor to table utilizing proper body mechanics and lift techniques, and perform moderately complex manual manipulations such as using standard kitchen equipment and working on the tray assembly line. Mobility requirements may include the ability to squat, stand, and walk for a prolonged time (8-hour shift) and distance. Sensory requirements include the ability to articulate and comprehend the spoken English language, in addition to being able to read the English language.
WHAT WILL YOU DO AS A CHEF II?
Job Summary:
Chef II assists in directing production staff in the hot and cold food areas during the daily routine functions of the Dining & Nutrition Department. The food and nutrition services chef position works under the supervision of the chef manager/dining services manager, and/or the director of food and nutrition services. Must have skills in food preparation, production control, standardized recipe compliance, cooking techniques, inventory control, kitchen safety, sanitation, equipment uses and cleaning/sanitizing, food safety, menus, and therapeutic diets. Additional skills include adherence to facility policies and procedures related to the food service department, and must work well under the direction of a supervisor or manager.
RESPONSIBILITIES:
  • The position will direct Chef 1 and other staff in the absence of a manager/supervisor and will role model behaviors that support the department's safety and employee conduct standards.
  • Assists in directing production staff in the hot and cold food areas in the daily routine functions of the Dining & Nutrition Department.
  • Ensures certain policies and procedures are being followed, standardizes recipe compliance, and meets cooking techniques and food safety procedures to serve our patients, visitors, and staff at Ellis Hospital's facilities.
  • Serve meals with proper portion control and good plate presentation.
  • Reviews menus, tally sheets, and prep sheets to determine the type and quantities of foods to prepare and avoid food waste.
  • Plan cooking schedules so foods are ready to be served at specific times and set up for steam tables.
  • Continuously follows recipes using weights and/or measures with good portion and ingredient control. Monitors portion sizes served.
  • Follow recipe work methods, using proper time and temperature control, holding food appropriately, and meeting required serving temperatures. Also, follow proper reheating and cooling methods.
  • Prepare food promptly, meeting all serving periods and demands.
  • Prepare food in small batch cooking schedules throughout the meal period, and with steam table temperatures monitored.
  • Prevents waste of product by decreasing batches and recovering overproduction, utilizing proper food cooling and storage techniques.
  • Records quantities of food produced, including over- and under-amounts.
  • Handle and prepare all foods per food safety and sanitary regulations.
  • Properly store, label, and date all stored foods and discard out-of-date food items.
  • Use and keep work areas and equipment/utensils clean, sanitized, and in good operating condition to provide a quality product and optimal safety. Sanitizing solutions are present in the work area, and cleaning rags are stored in them.
  • Ensures safety practices are followed, perform inspections and safety audits, and provides ongoing coaching and input.
  • Document and complete QA logs and perform corrective action as needed.
  • Assists with kitchen rounds; ensures food and physical work environments are safe, meeting sanitation and food standards for regulatory compliance.
  • Report food preparation, cross-contamination, and equipment issues to the manager.
  • Recommend new products and procedures and collaborate with other departments.
  • Provide on-the-job training and serve as a guide to new employees, as well as provide performance feedback.
  • Additional duties as assigned.

Salary Range: $18.33 - 26.58/hour Pay is based on experience, skills, and education. Exempt positions under the Fair Labor Standards Act (FLSA) will be paid within the base salary equivalent of the stated hourly rates. The pay range may also vary within the stated range based on location.
