Playground is an internationally renowned gaming destination located a short 15-minute drive south of downtown Montreal, within the Mohawk territory of Kahnawake. We are currently expanding, unveiling new gaming floors, a luxurious hotel, and specialized dining options.

Position Overview:

We are seeking an experienced and talented Fine Dining Grill Cook to join our fine dining Steakhouse. As a Grill Cook, you will be responsible for preparing and cooking exquisite dishes with precision and attention to detail. You will work alongside a team of skilled chefs to ensure that our guests have an exceptional dining experience.

Responsibilities:

  • Preparing, cooking and presenting high-quality dishes within the specialty section according to the recipe book and pictures
  • Set up workstations with all the needed ingredients and cooking equipment
  • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
  • Ensure a great presentation by dressing dishes before they are served
  • Keep a sanitized and orderly environment in the kitchen
  • Ensure all food and other items are stored properly
  • Check the quality of ingredients
  • Clean food prep areas, equipment, utensils, and strictly adhere to sanitation, food safety, hygiene, and other health and safety guidelines
  • Managing and training any second cook within the section
  • Other duties or responsibilities as assigned or required

Requirements:

  • Minimum 4 years of experience in a similar position as a grill cook in a fine dining restaurant
  • Experience with charcoal and wood grills is a plus
  • Ability to take direction and work calmly and effectively under pressure
  • Able to spend 100% of the time standing
  • Must be fluent in English or French and 18 years or older
  • Excellent communication, interpersonal and organizational skills
  • Must be able to adapt to different environments and speeds, as business flows can fluctuate greatly
  • Presents a clean-cut, neat and professional image
  • Ability to multitask and remain calm and professional in a fast-paced environment
  • Has an excellent understanding of time management
  • A positive and collaborative team player attitude
  • Flexibility to work various shifts, including weekends, evenings, overnight hours and holidays

Responsabilités:

  • Préparer, cuisiner et présenter des plats de haute qualité dans la section des spécialités selon le livre de recettes et les photos.
  • Mettre en place les postes de travail avec tous les ingrédients et le matériel de cuisine nécessaires.

  • Maintenir un environnement aseptisé et ordonné dans la cuisine.
  • Veiller à ce que tous les aliments et autres articles soient stockés correctement.
  • Vérifier la qualité des ingrédients
  • Nettoyer les zones de préparation des aliments, les équipements, les ustensiles et respecter strictement les règles d'assainissement, de sécurité alimentaire, d'hygiène et autres directives en matière de santé et de sécurité.

Exigences:

  • Au moins 4 ans d'expérience dans un poste similaire de cuisinier de grillades dans un restaurant gastronomique.
