What does a professional baker do?

A professional baker is responsible for preparing and baking a variety of breads, pastries, cakes, and other baked goods. They follow specific recipes, measure and mix ingredients, operate baking equipment, and ensure the quality and consistency of their products. Bakers may work in bakeries, restaurants, grocery stores, or pastry shops, and often start their workday early to provide fresh products for customers. Their job also involves maintaining cleanliness, managing inventory, and sometimes developing new recipes.

What are the key skills and qualifications needed to thrive as a professional baker?

To thrive as a Professional Baker, you need expertise in baking techniques, dough preparation, and food safety, often backed by a culinary degree or apprenticeship. Familiarity with commercial baking equipment, ingredient measurement tools, and food safety certifications like ServSafe are typically required. Attention to detail, creativity, and time management are essential soft skills for producing consistent, high-quality baked goods. These skills ensure product excellence, efficient operations, and customer satisfaction in a competitive food industry.

What are some common challenges professional bakers face when working in a commercial kitchen?

Professional bakers often encounter challenges such as managing early morning shifts, working in fast-paced environments, and consistently producing high-quality baked goods in large quantities. Adhering to strict health and safety standards while maintaining efficiency can also be demanding. Collaboration with other kitchen staff is key, as bakers frequently coordinate with pastry chefs, cooks, and front-of-house teams to ensure timely service and product consistency.

Pizzaiolo/Baker

Location: East Atlanta Village (Atlanta, GA)

Pay: Salary

Position Type: Full-time

Benefits: Professional health & wellness benefits access via Oyster Sunday

About Sagra

Sagra is a new neighborhood wine bar in the heart of East Atlanta Village. Inspired by Italian harvest festivals, we focus on dynamic low-intervention wines, curated charcuterie and tinned fish, and traditional Roman-style sourdough artisan pizzas and focaccia.

Because we are a lean team, everyone will wear multiple hats.

The Role & Culture

We are seeking a curious, reliable pizzaiolo and baker with experience in Italian cuisine who wants to be part of an intentional, collaborative kitchen environment.

Our culinary program is focused and streamlined—centering sourdough focaccia and pizza, high-quality ingredient assembly, deck-oven baking, and light prep. You will work directly alongside leadership in an open and respectful environment.

What you’ll do:

  • Participate in daily prep, including sourdough handling, ingredient assembly, and light kitchen prep.
  • Execute station setup, service, and closing procedures with precision and high sanitation standards.
  • Work a station during service
  • Collaborate closely across the entire floor—we operate as one team where FOH and BOH support each other.

What We Look For

  • Culinary foundation- Prior experience in a professional baker and/or pizzeria with a solid grasp of high hydration sourdough pizzas and breads, food safety/sanitation, and expediting service.
  • Team-First Mindset: You value a clean, respectful, and energetic kitchen environment where everyone pulls in the same direction.
  • Detail & Consistency: A strong work ethic, punctuality, and pride in maintaining a clean work area.
  • Adaptability: Comfort working in a high-turnover, neighborhood-focused bar environment.
