Prep Cook - Crooked Hammock Brewery

Summary of Position: The Prep Cook at Crooked Hammock Brewery will cook and prepare a variety of food products including meats, seafood, poultry, vegetables, sauces, stocks, breads and other food products using a variety of equipment and utensils according to the Daily Prep List. Must Enjoy the Ride!

Duties amp; Responsibilities:

  • Complete opening and closing checklists
  • Refer to the Daily Prep List at the start of each shift for assigned duties
  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment
  • Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications
  • Maintains a clean and sanitary work station area including tables, shelves, walls, grills, broilers, fryers, pasta cookers, sautĂ© burners, convection oven, flat top range and refrigeration equipment
  • Attends all scheduled employee meetings and brings suggestions for improvement
  • Promptly reports equipment and food quality problems to the Kitchen Manager
  • Inform Kitchen Manager immediately of product shortages
  • Uses our Standard Recipe Card for preparing all products. Do not rely on the memory of yourself or other employees
  • Performs other related duties as assigned by the Kitchen Manager or manager-on-duty
  • Assumes 100% responsibility for quality of products prepared
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
  • Handles, stores and rotates all products properly
  • Live the brand and be a brand ambassador; make decisions in the best interest of the business every time

Qualifications:

  • 1-3 years full-service restaurant kitchen experience preferred
  • High School Diploma or equivalent required; Culinary degree preferred
  • Must be at least 18 years of age and eligible to work in the United States
  • Must have reliable transportation to/from work
  • Must possess strong understanding of cooking methods amp; procedures, and knife handling skills
  • Ability to perform tasks with accuracy, speed, and attention to detail
  • Ability to read amp; follow cooking directions and other instructions pertaining to the position
  • Ability to remain calm in a fast-paced environment
  • Basic written amp; verbal communication skills
  • Must be organized with a self-starter amp; motivated work ethic
  • Must be a team player
  • Must be able to stand, bend, stretch, lift, and carry heavy materials up to 50lbs
