About the Role

Ember Management Group is hiringPM Sushi Cooksto join the opening culinary team forBuccan, Imoto, and The Sandwich Shopin Coral Gables. This is a hands-on line position for cooks who thrive in a fast-paced, quality-driven, scratch kitchen environment.

Line Cooks are responsible for executing menu items during service according to established recipes and standards, maintaining clean and organized stations, and supporting the culinary team with consistency, urgency, and attention to detail.

Responsibilities

Prepare sushi, sashimi, nigiri, maki rolls, and composed Japanese cold dishes according to restaurant recipes and presentation standards

Portion fish with precision while maintaining strict quality and freshness standards

Prepare sauces, garnishes, condiments, and supporting components for service

Maintain proper seafood storage, labeling, and rotation procedures

Set up, stock, and maintain sushi station for service readiness

Maintain clean, organized, and efficient workstation throughout service

Operate and properly maintain sushi knives, rice cookers, slicers, and smallwares

Follow all food safety, sanitation, and workplace safety standards

Communicate clearly and effectively with chefs and teammates during service

Maintain attention to detail in plating, portioning, and overall presentation

Support prep, breakdown, and closing duties as assigned
