We are hiring a Senior Line Cook to join the culinary team at Caroline's Oyster Bar inside the JW Marriott Charlotte. What You'll Do

• Mentor entry-level cooks and culinary apprentices while overseeing daily food preparation and production at Caroline's Oyster Bar — upholding the culinary standards of a JW Marriott luxury hotel restaurant
• Follow all White Lodging F&B procedures, health department regulations, and federal food safety guidelines across every shift at this upscale Charlotte hotel kitchen
• Ensure proper food handling, storage, and sanitation procedures are followed at all times in accordance with HACCP standards and JW Marriott brand requirements
• Assist in maintaining food cost and labor cost standards — contributing to the financial performance and operational efficiency of the Caroline's Oyster Bar culinary team
• Check the freshness of all foods and ingredients; ensure all recipes, portion-use records, and oyster bar preparation standards are consistently followed
• Monitor guest feedback scores and proactively influence food quality, consistency, and presentation to drive positive rankings for Caroline's Oyster Bar and the JW Marriott Charlotte
• Foster a climate of cooperation, professionalism, and respect among all culinary coworkers in this upscale hotel kitchen environment
• Perform other duties as assigned

What You'll Bring

• Solid working knowledge of all commercial kitchen and cooking preparation equipment in a high-volume hotel or upscale restaurant environment
• Demonstrated proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery — seafood cookery and oyster bar experience a strong plus for this role at Caroline's Oyster Bar
• Experience mentoring or leading junior kitchen staff — prior senior line cook, lead cook, or chef de partie experience preferred
• Culinary degree, culinary school training, or apprenticeship preferred — not required; we will train the right candidate
• Ability to stand and move at a fast pace for extended periods in a high-volume upscale hotel kitchen environment
