Job Summary: F&B Steward maintains sanitation of dish room areas, equipment, cleans walls, coving, and floors in back of the house having direct contact with food service; washes dishes in prescribed manner following set procedures.

Primary Duties & Responsibilities:

  • Greet all guests and Team Members in a friendly, open manner.
  • Conduct oneself in a positive and professional manner, acting as a role model for all Team Members.
  • Maintain knowledge of all current and upcoming promotions and events at Odawa Casino Resort.
  • Abide by all health codes and regulations.
  • Maintain records required by regulatory as directed by management.
  • Assist with maintaining and updating MSDS books as directed.
  • Stock chemicals in respective areas and maintain pars as necessary.
  • Carry dirty dishes from breakdown areas to the dishwashing areas.
  • Maintain and operate dishwashing equipment according to safety and sanitation procedures.
  • Submit work order for necessary equipment repairs.
  • Remove all bagged dirty linen and replace as necessary.
  • Remove garbage from the kitchen areas and dispose of properly.
  • Maintain a safe and clean work area.
  • Clean and sanitize trash cans, bus carts, dumpster area after use.
  • Clean and sanitize steam kettles, tilt skillets, speed racks, Carter Hoffman cabinets, and Queen Mary carts.
  • Sweep and mop floors as necessary.
  • Make sure kitchen staff have necessary utensils and items to operate within the kitchen.
  • May be requested to run for products to and from the warehouse.
  • Run clean dishes to front of the house if necessary.
  • Maintain par levels of plate-ware, glassware, silverware, small-wares and related items.
  • Assist busser in breakdown of bus carts if time allows.
  • Maintain neat and well-groomed appearance in accordance with dress code policies.
  • Attend all meetings as required.
  • Complete all required training satisfactorily.
  • Maintain the highest level of confidentiality at all times.
  • Work at other properties as needed.
  • Perform all other duties as assigned within the scope of the position.

Minimum Qualifications:

  • Must read, write and speak English fluently.
  • Must have good communication skills and be able to comprehend simple instructions, short correspondence and memos.
  • Must have basic math skills.
  • Must be able to meet physical requirement such as significant lifting up to fifty (50) pounds, along with standing for long periods of time, bending, reaching, stooping, pushing, and pulling.
  • Must be flexible with shift and days off with the ability to work overtime, weekends, holidays and special events, etc., as needed.
  • You may be required to pass a skills assessment test to determine if you meet the minimum qualifications of the position.
  • Must be able to obtain a gaming license in accordance to the regulations established by the LTBB Gaming Regulatory Commission, and be able to serve in the position under any other applicable law.
