Purpose:
Food Scientist works on the practical application of food science principles to develop and improve food products and are involved in product development, quality control, safety, nutritional value of food products, and troubleshooting production processes.
Job Responsibilities:
  • Demonstrate expertise in our ingredients and product formulations, including flavor and sensory science and the impact of food chemistry on organoleptic characteristics and manufacturing performance.
  • Apply expertise to all elements of the concept-to-launch development cycle; including, but not limited to, Sales/customer consultation and recommendation, project scoping, assembling relevant documentation, formula and application development, trials of various scales, and technology transfer.
  • Develop and maintain functional knowledge of processing technologies used at Ellison.
  • Assist in managing technical projects and work with cross-functional teams against defined timelines, budgets, and deliverables to generate new platforms and products, refine/optimize processes, reduce the cost of goods, improve product performance, or resolve quality challenges.
  • Participation and adherence to all food safety and safety programs.
  • Completion of assigned Alchemy courses that are required throughout the year.
  • Conduct testing of new products in a test kitchen
  • Develop new processing methods.
  • Organize and direct sample development.
  • Product testing.
  • Calculate the nutritional content of food.
  • Develop appropriate control measures for new products.
  • Develop new production technologies that can increase the efficiency and quality of the product.
  • Evaluate the results of new and old technologies and assess their impact on food product characteristics and safety Engage with new product launches, working with Production and Quality to dial in production settings for new SKUs.
  • Create and maintain work instructions detailing operation settings and specifications for oven settings, machine-specific settings (wire-cut, rotary, etc.), and post-production packaging.
  • Work with the Assistant R&D Manager to keep the lab organized, assist with feedback on samples, and manage inventory of stock samples
  • Handle the R&D sample shipments, including but not limited to:
    • Organizing and updating Customer Sample Requests database.
    • Printing labels for samples needing to be shipped.
    • Bagging and boxing up samples in preparation for shipping.
    • Creating shipping labels through the UPS/Fed Ex interface.
    • Manage kosher database including commercialized SKUs, Private Label Agreements, etc.

Skills/Work Experience Needed:
  • Must be able to understand and follow directions and pass all Food Safety and Safety courses in the English language (Required).
  • Relevant experience in the food industry (Required).
  • Possess a Bachelor's Degree in Food Science (Required).
  • Proficiency in Microsoft Suite.
  • Knowledge/aptitude to learn specific programs (ERP, nutritional software, labeling software, etc.)
  • Lifting up to 25lbs. of weight.

Work Environment:
  • Production area can vary in temperature either cool or warm depending on the season and possibly humid in the summer months.
  • Concrete floors are slippery, especially when wet.
  • Intact senses of sight, with corrective lenses, are necessary.
