Flippers Pizza Company is seeking a dependable, detail-oriented Dough Mixer Operator to join our food manufacturing team.  In this critical role, you will be responsible for producing high-quality dough products by accurately scaling ingredients, operating industrial mixing equipment, monitoring dough temperatures, and following established production procedures.  The Dough Mixer Operator plays a vital role in ensuring product consistency, food safety, and production efficiency.  This position requires strong attention to detail, the ability to follow formulas and specifications precisely, and a commitment to maintaining a clean, organized, and safe work environment.  The ideal candidate takes pride in producing a consistent, high-quality product while supporting the overall success of the production team. 
Responsibilities
• Accurately scale and verify ingredients according to approved formulas and batch sheets. 
• Operate industrial dough mixing equipment safely and efficiently. 
• Verify and document ingredient weights, water temperatures, dough temperatures, mix times, and batch information. 
• Monitor water chiller performance and verify water temperatures meet production specifications before each batch. 
• Follow established SOPs, specifications, and production schedules. 
• Prepare dough for frozen dough ball production, par-baked pizzas, sauce-baked pizzas, sauce and cheese pizzas, breadsticks, knots, bites, Roman-style products, and other dough products. 
• Ensure ingredients are properly identified, labeled, and used according to FIFO practices. 
• Perform pre-operational inspections of mixing equipment and work areas. 
• Maintain accurate production records, batch documentation, lot codes, temperature logs, and food safety records. 
• Spray, prepare, and stage dough trays and equipment as required. 
• Assist with dough handling, transferring, scaling, dividing, and staging activities. 
• Communicate equipment issues, ingredient shortages, quality concerns, or food safety concerns immediately. 
• Perform routine cleaning and sanitation of mixers, utensils, ingredient containers, floors, and surrounding work areas.  
• Operate pallet jacks, or other material handling equipment safely when authorized. 
• Assist in training new Dough Mixer Operators and team members. 
• Promote teamwork, accountability, and continuous improvement within the mixing department. 
Food Safety & Quality Responsibilities
• Follow all GMPs, food safety procedures, and company policies. 
• Adhere to SQF, FSMA, HACCP, allergen control, and sanitation requirements. 
• Verify ingredients, formulas, and batch information before each mix. 
• Monitor dough and water temperatures to ensure compliance with specifications. 
• Immediately report any food safety, quality, equipment, or foreign material concerns. 
• Maintain a clean and organized work area at all times. 
• Ensure proper handwashing, PPE usage, and personal hygiene requirements are followed. 
• Participate in food safety training, audits, inspections, and corrective actions. 
• Complete required documentation accurately and in real time. 
• Document and communicate corrective actions whenever specifications fall outside limits. 
Qualifications & Skills
• Previous experience in food manufacturing, commercial baking, dough production, or related environments preferred. 
• Knowledge of food safety principles, sanitation procedures, GMPs, HACCP, and food manufacturing best practices. 
• Strong attention to detail and ability to follow formulas and specifications. 
• Basic math skills for scaling ingredients and verifying batch weights. 
• Mechanical aptitude and basic troubleshooting ability. 
• Ability to accurately complete production, quality, and food safety documentation. 
• Strong communication and teamwork skills. 
• Ability to work independently with minimal supervision. 
• Leadership skills and willingness to assist with training. 
• Ability to lift up to 50 pounds repeatedly throughout the shift.

Wednesday through Saturday 8am to 6pm (hours may vary depending on production)
