Job description

Job Title:       Sushi Cook

Reports to:    Executive Sushi Chef

FLSA:           Non Exempt


Job Description:

        Summary: Assist the Islander Sushi Chef in the development and production of sushi in a professional, creative, & cost effective way. Responsible for organizing the sushi station following the Chef's instructions while observing all food handlers and sanitation standards.

        Help the Sushi Chef produce tasty, creative, attractive and well-balanced sushi.

        Establish a high level of consistency in the preparation and presentations of all sushi served at ORC.

        Expedite all meals, and special requests in an organized, timely and efficient manner.

        Help produce sushi daily specials using the best and freshest ingredients money can buy.

        Assist Chef if needed during the pre-meal meetings and help conduct staff tastings of daily specials.

        Maintain and observe extreme attention to all sanitation procedures and food rotation.

        Help revise menu content, seasonal recipes and according to sales and members/guest feedback.

        Follow the associate handbook at all times, follow ORC rules of conduct, policies and uniform standards.

        Maintain very high hygiene standards, food handling, hand sanitation and organization while at work.

        Have a good rapport with members at the Sushi-Bar and fellow workers at all times.

        Communicate clearly and politely in English with Members or anyone eating at the Sushi-Bar.

        Help conduct food inventory and ordering as needed or as told.

        Up-keep the maintenance and cleanliness of the Sushi station by cleaning all visible surfaces daily.

        Create and maintain a safe working environment at all times.

        Attend all required meetings and ORC university development classes as needed.

        Be able to take charge in any emergency.

 

Job Requirements:

 

        Eighteen (18) months of hands-on experience preparing sushi in a restaurant, private club, or hotel/resort.
