Job Description:
Under the direction of the Sous Chef, the incumbent requisitions and orders necessary quantities of meats, poultry and fish to service all food outlets. Duties include, but are not limited to:
Essential Duties and Responsibilities:
- Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures.
- Carefully surveys menus and, in conjunction with the Chef and Sous Chef, compiles a list of meat, fish and fowl as required.
- Prepares fish, poultry and meat in accordance with established standards set by the head butcher.
- Sees to the proper rotation, storage temperature and environment required.
- Strives to eliminate over-production and over-purchasing.
- Maintains quality inventory control of all fish, poultry and meat items.
- Ensures all food items are butchered in accordance with established standards in respect to preparation, storage and accountability.
- Ensures that the butcher shop and storage areas are maintained in accordance with city and state health department codes.
- Perform other duties as assigned.
Qualifications:
High school diploma or equivalent required with five (5) to seven (7) years in the butcher's trade preferred. While performing the duties of this job, the employee is regularly required to use hands to handle, or feel; reach with hands and arms. The employee frequently is required to stand and walk.
Work Environment:
- While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.

- The Casino environment is hectic, fast-paced and often crowded and noisy. May be exposed to casino related environmental factors including, but not limited to, second hand smoke, excessive noise and constant exposure to general public.Â
- Must be able to communicate effectively with guests in English, specific to position duties and responsibilities.
