Job description

Assists Lead Butcher in proper fabrication of all meats, fish and poultry to hotel specifications. Cuts, trims, bones, ties, and grinds meats, using butcher's cutlery and powered equipment, such as electric grinder and band saw, to portion and prepare meat in cooking form. May estimate requirements and requisition or order meat supply.  May receive, inspect and store all products upon delivery. May record quantity of meat received and issued to cooks. May clean fowl and fish.

  • 1 - 3 years in fabrication of meat, fish and poultry

  • Ability to use hand tools, stand or walk for extending periods, lift heavy items, and work in cold environments

  • Knowledge of meat preparation techniques and cuts

  • Must have the ability to provide our guests with excellent customer service, 

  • Excellent communication skills and observation skills

  • Have an easygoing demeanor to ensure a fun and safe environment for our guests

ADDITIONAL REQUIREMENTS

  • Working environment will be continuously cold. Working with kitchen equipment where being safety conscious is required. Working in area where liquid and grease spills are most likely to occur.

  • Must be able to sort, write and count in English.

  •  Must be able to push/pull and lift/carry 50 pounds unassisted. 

  • Must be able to work overhead. Must be able to tolerate repetitious hand/arm/wrist movements. Must be able to stand, walk and on feet for many hours at a time.       

  • Must be able to grasp objects. Must be able to tolerate long periods of knife use. 

  • Must have the ability to shift back and forth between 2 or more activities in a timely manner and the ability to complete each. 

GUEST SERVICE (INTERNAL/EXTERNAL) STANDARDS:  Employee is required to meet and deliver our core values, service standards, and family style service.

PERFORMANCE REQUIREMENTS: Must have the ability to provide internal/ external guests with service excellence, have excellent communication skills and observation skills, and have an easygoing demeanor to ensure a fun and safe environment for our guests. Above average speech - both speaking and reading/writing English. Need excellent interpersonal skills. Work requires schedule flexibility which may include days off, nights, weekends, holidays, and overtime as needed.
